Chitlins, also known as chitterlings, are cooked pig intestines, from the small intestine of the pig. They're cleaned, battered and fried to a crisp.

Cooked intestines are part of other culture's "ethnic" cuisines, as well, including chinchulines (part of a traditional parrilada recipe in Argentina), silit (Filipino) and Makchang (Korea).

As you might suspect, the absolutely most important thing about preparing chitlins is the cleaning process. They have to be soaked in several clean-water baths to eliminate any harmful bacteria.

Something really disgusting. Why is it pigs are the only animals people seem to want to eat EVERY part of...hooves, neck, intestines, even SKIN. Yuck.
