These are some ideas that are quick and easy. You could have Veggie burgers and fries, hummus and pita bread, Vegetarian tacos instead of meat use morningstar crumbles or,

Guacamole and chips:
2 avocados
1 small onion, finely chopped
1 clove garlic, minced
1 ripe tomato, chopped
1 lime, juiced
salt and pepper to taste

DIRECTIONS:
Peel and mash avocados in a medium serving bowl. Stir in onion, garlic, tomato, lime juice, salt and pepper. Season with remaining lime juice and salt and pepper to taste. Chill for half an hour to blend flavors.

Burritos:
INGREDIENTS:
1 (10 inch) flour tortilla
1/4 cup vegetarian refried beans
1 slice American cheese
1 pinch ground black pepper
1 teaspoon low-fat sour cream
1 dash hot pepper sauce

DIRECTIONS:
In a small pot heat the refried beans until they are heated through, approximately 5 minutes.
Warm the tortilla in a dry frying pan over medium-high heat.
Lay the burrito on a flat surface. Place the refried bean in the center of the burrito, layer the cheese, pepper, sour cream and hot sauce over the beans. Roll the tortilla so that the mixture is wrapped in the center. Serve warm.

Here are a few ideas that may work

Gazpacho (cold tomato-based soup)

- 1 garlic clove
- 3 cups low sodium tomato/veregtable juice (i like using "garden patch" from trader joes
- 1/4 cup olive oil
- 1 cucumber chopped in small pieces
- 1/4 cup greeen onion chopped small
- lemon juice to tast

Cut all ingredients as small as you can and mix with the juice and olive oil (if you have a blender it's easier, but you can do it by hand also).
Add some salt, cayenne pepper, and lemon juice to taste and voila... Healthy and quick. Could can add some chunks of avocado if you like.


Many salads are also easy to make, for example:

Walnut-Apple salad:
Combine some lettuce or chopped raw cabbage with an apple cut in pieces, walnuts, cranberries, and a bit of (vegan) mayonnaise. Many other options you can add such as some chopped garlic, pepper, chopped green onions, cut cucumber, tomatoes, etc.

Quesadillas with cheese (or a soy cheese if that works better for you). Take a tortilla and put some hot sauce on it (salsa, ot something similar). Then put cheese and fold it in half. Stick it in the toaster with the folded side down (so that the cheese doesn't drip into the toaster when it melts). With my toaster it works well on the middle setting (3). Or put in frying pan with a little oil and fry on both sides till it's crispy. There are many variations you can try, for example, using pesto instead of salsa, or adding some roaster bell peppers (they sell them in jars).

You can also use a toaster to heat up (frozen) garden burgers, and other burger-like meat substitutes.

If you have a microwave, you can make lots of things. For example, many vegetables cook really well (and preserve all heir flavors when you rinse them and put them in a bowl with a lid, or between two plates with whatever water stick to the veggies. Put the bowl or plates in the microwave on high until the veggies are done (often 3-5 minutes). This works really well for asparagus, green beans, and broccoli. I have a full kitchen, but this is my preferred way to cook veggies. Once cooked, you can eat them plain, add some butter, or add some store-bought sauce like hoi-sin sauce (for Asian food), pesto (Italian), or anything you like. Eat the veggies with some steamed rice, or even easier, bread. For protein you can add cheese, or a garden burger, or some nuts.

I'll make a big salad with various different lettuces, toss in some lightly steamed carrots, green beans, broccoli, peas, and pearl onions. Then I'll put a fish filet on top. If you don't eat fish either, add black and kidney beans. Any dressing you want (I never use a dressing, though). Add a yam/sweet potato wedge on the side, and voila!
