Roasted Peppers stuffed with Mediterranean rattatoue.


Take the tops of of three peppers, (red, green and yellow for appearance) ((Three per person)).

Place them to one side..

Get mixed vegetables i.e. tomatoes, aubergine, onions, mushrooms, courgettes and some carrots.
Dice these down to smallish sized pieces and place into a large saucepan add a tin of chopped tomatoes some chopped garlic and rosemary and simmer down till all of the veg is nice and soft but still has a nice bite to it.

Place this mix in to the peppers, place them onto a baking tray and into an oven which has been pre heated to 200 degrees for about 20 Min's with the tops of the peppers that you have removed back on to the mix.

For an extra twist.. once the mix is in the peppers you can sprinkle with a little cheese. then place the tops back on.

There you have it a really easy dish, that looks like you have spent an eternity on.

Tacos...get a few cans of beans, including one can of kidney beans. Heat oil in a pan and add chopped bell pepper. Cook until soft, then add beans all at once. Mash at least half the beans with a fork. Simmer until beans are thick and most liquid has evaporated. When beans are ready, in a separate pan heat oil for the corn tortillas. With a fork in each hand, put the corn tortilla into the hot oil, cook for about 10 seconds or until it is soft, then use forks to turn it to cook the other side. Put cooked corn tortillas onto a plate, and it is best to have people begin making their tacos before the tortillas cool off. Have the toppings ready, chopped onion, lettuce, tomatoes, shredded cheese and sour cream (or non dairy substitute or none if they are vegan). Put a large spoonful of the hot beans on the cooked tortilla, and people can add what toppings they like, and sour cream and hot sauce if desired. Fold the tortilla in half and eat it. I have never had anyone say anything other than they LOVED these tacos made like this. It is messy to eat them, but they are really good. Most people have at least three or four, so you can plan the ingredients needed on the number of people you are cooking for.The only thing is that the person cooking the tortillas usually has to eat last!

Well first you can give them a salad as like a side dish and that doesnt take long as you can by them ready made and then make pasta with wegetables and use a tomatoe and herb sauce. use any vegetables lie mushrooms leeks and carotts.
Also you can serve ice cream if the weather is hot, then serve Rasberry ripple as it loks nice as the lines add effect in tall glasses and sprinkle with some toasted almonds. All in all this should take half an hour including cooking times and making!
p.s 4 pasta follow instructions on the packet!

Baked potatos? If they are vegetarian, and not vegan, you can bake them in halves, with cheese-and-veggie filling, and the result is delicious. And the others present can have some too, as a side by the rest.

There are loads of meat-less meals out there. When I am alone, I usually cook without meat, for myself only.

Another suggestion - beans - and - onions salad as a side... it's easy.

Crudettes with cheese and chive dip or
Toast triangles with a veggie spread topping
Ratatouie provancial with feta on a bed of spinich.

This is quick and easy and although I am not veggie I enjoy this myself from time to time.

Main meal

Go to supermarket, buy tins of ratatouie provancial.
Buy a bag of preprepared spinich
Buy some feta from the cheese counter

Set a bed of spinich in semi deep flat bowls
Heat and empty the tinned ratatouie over the middle of the spinich in a neat fashion.
Dice the feta into small cubes and scatter over the top
Serve

Don't think I need to give you info for crudettes

Portabella Mushroom "Burgers" with "fresh" sliced, Mozzarella (or Smoked Cheddar), "Bib" lettuce, thin-sliced Red onion, "fresh" Tomato, Sprouts, & "Roasted Pepper Hummus" taking the place of Mayo.

1. Apply olive oil , S&P, Chili Powder, garlic powder to fresh mushroom caps.

2. Grill or roast caps until they are "charred" blackish brown.

3. Put warm on a kaiser-roll/hamburger bun; add your toppings! Viola!

(Vegetarians LOVE veggie & pasta soup. Buy 4 cans of "organic", bean/pasta & veggie soup at your local grocery store. ADD some fresh veggies to this soup, (like minced onion, small-dice celery, minced garlic, rough-cut Basil, small-diced carrots, & Red & Yellow Peppers; and maybe some fresh pasta .

Make sure you hide the cans DEEP in the garbage and tell them you made "home-made" soup "just for them"! They will dig it!

Trust me!) Good luck!

PS:( The "cool" part of this menu : the only thing you are "cooking" is the mushrooms & "warming up" soup. The additional veggies/pasta you put in the soup will cook in 30 minutes on the stove(on med/low). This gives you more "free-time" to , say, enjoy an alcoholic beverage or 4! )

Stirfry a load of vegetables, including baby corn, mange tout, peppers, mushrooms, water chestnuts, bamboo sprouts, onions, carrots, etc. with some soy, or a Blue Dragon sauce packet (the lemon or honey and coriander one is good for vegetables). Throw in some tofu to act as the "meat". Serve to all - vegetarians and non- alike. One very simple dish to prepare, cook, and serve (and saves on the washing up, as there's only one saucepan for the meal!). Eating with chopsticks in chinese bowls only adds to the experience.

Vegie bake-
potato
zuccini
carrot
pumpkin
and any other yummy vegie you want
Method
Slice everything up and chuck it in a baking dish
drizzle 1/2 cup of cream over the veg
cover in cheese
sprinkle parsley on top
in oven (190 degrees celsius) until cooked
Serve with salad or something of the sort and...
VOILA! a quick, easy AND yummy dinner for vegos

Two suggestions:

1. Cook some small pasta, like penne. Drain. Put in a bowl. Toss with olive oil, salt, garlic, riccotta cheese, and toasted pine nuts.

or

2. Get (or make) a pizza crust. Make a cheese pizza. If you want, saute some sliced onions, garlic, zuccini, summer squash, and red pepper together for toppings.

They will love you!

Try this for a quick, simple, delicious veggie (or non veggie) main course.

Red onion and goat's cheese tart

1 packet of ready made puff pastry
3 large red onions
250g goat's cheese
large handful of cherry tomatoes
Splash of balsamic vinegar

Roll out pastry onto a baking tray
Fry onions till really cooked, almost caramelised
Add splash of balsamic vinegar
Put onions on top of pastry
Cut cherry tomatoes in half and put them on top of onions
Roughly cut up goat's cheese and scatter it evenly
Bake for about 15-20 minuntes at a medium heat till cheese is cooked and pastry is golden brown

Delicious - success guaranteed! Enjoy your meal!

P.S. Made myself hungry now!
