Have you tried the "fake" meat things like burgers, hot dogs, chicken? A lot of them are pretty good. I really like lentil stew...soak lentils overnight, rinse and put water in the pot with them...add onion, garlic, potatoes and fresh or canned spinich. Cook until done, adding more water if needed...this recipe is also good with mung beans, the sprouts in Chinese food are made from mung beans. The lentil stew is very good with corn bread. I like to make lasagne...with cottage cheese, 2 or 3 other cheeses, zucchini, onions, garlic and spinach, tomato sauce and cooked lasagne noodles...layer it and bake for about an hour...very good with a salad and toasted bread. I have served the lasagne on Thanksgiving to people who ate meat, and they just loved it and didn't miss turkey on Thanksgiving. Chili is good...fry some onions, bell pepper and garlic until soft, then put three or four cans of whatever beans you like, (I put two each of pinto and black beans), into a pot with the onion/pepper mix, add one or two cans of diced tomatoes or tomato sauce and a little water, and one package of chili mix. Let is simmer for a while. It is very good with cornbread or corn tortillas. Burritos and tacos are good, falafels are very good...you can get the mix in most health food stores. Add some water to the mix and let sit a little while, then form into small patties and fry on both sides. Serve with either pita bread or soft, quickly cooked corn tortillas,(cooked in hot oil about 20 seconds on each side), with shredded cheese, lettuce, tomatoes, onions and sour cream. One of my bfs really enjoyed fried potatoes, fried eggs and toast..he ate that almost every day for dinner. Tamales are very good, I make them with cottage cheese, shredded cheese,corn, spinach, zucchini, tomato sauce, and anything you like, mixed up for the filling. Get Masa, a corn flour. I mix the Masa with water, garlic powder, minced onion, salt and pepper to a thin consistency. Spread the Masa on corn husks, put the filling on and wrap up securely, then steam them until the Masa pulls easily from the husk and the filling is done. These are much easier to make than it sounds and I freeze them and you can put them in the microwave and heat some enchilada sauce and it makes a very quick easy dinner. Yumm....could go on and on, but I am getting hungry!

Ummmmmm NOthing. Quit the Veggy thing, and eat what makes you feel good, but doesn't kill you.
If he pipes up and says beef is bad, cause it causes hair growth under your skin, or your eyes to turn purple, yeah whatever. If he says its bad because of Steroids and hormones, yeah whatever, each generation needs to get bigger any way.
If he says it could kill you, yeah whatever, George Burns lived till 245, or 100 ish not sure, drinking a 40 of whisky, and smokey a cuban every day......not sure but I think doctors say that might be bad too.

Make falafel, which is fried chick pea paste (sounds gross but it's amazing) with tzatziki sauce. Go on foodtv.com and type "falafel" into the search bar, then use the Dave Lieberman recipe. For the tzatziki, seed and dice half a cucumber, mix with half of a large container of plain yogurt, two tablespoons of chopped fresh mint, two tablespoons of chopped fresh or one tablespoon of dried dill, and one tablespoon lemon juice. Serve the falafel in halved pitas with the tzatziki on the side. You don't even realize it's vegetarian and it's good for you!

Look into indian cuisine, considering a large chunk of the country is vegetarian, you're bound to find quite a bit of variety.

Take a 22 ounce steak and marinate it in teryaki sauce. Then barbecue it until it is only pink inside. Spread butter over it liberally and take a sprig of parsley and put it on top.
Vegetarianism is great....taken in moderation.

have you tried steamed veggies with cheese on them maybe he will like that and you dont have to add cheese to yours if you are concerned about your weight
