It is food that is served to tourists in Hawaii. The favorite dish is with the pig and vegetables. You will also find poi.

There are also dancers who dance during the evening meal. When I was there, I likes to watch the ladies dancing and men doing the sword and flame dances.

The question is too broad. Polynesia is a group of island countries in the pacific. Each has its own unique tastes and ingrediants and styles. There are some similarties in general but otherwise its better to look for individual countries. French ploynesia is different again as the food and cusine style has been heavily influenced by french colonialism over the years.
Probably one style of cooking that is used across polynesia and the pacific is pit style cooking. NZ Maori call this a hangi. Where a pit is dug, a fire is lit until stones that have been placed inside a red hot, soaking wet cloths or flax mats are placed on the stones. Baskets of meat and assorted food are added, covered then buried. depending on the size of the hangi it can take anywhere from 3 to 10 hours to cook. Tastes great though. You will find that most individual polynesisn cultures have a version of this method of cooking. Usually its used for large groups.

I am a chef from New Zealand. E mail me if you would like to know more about Maori food styles if you like.
