My friend is getting married and instead of a shower we are having a very casual pool party (at her request) and I have to bring a poolside snack that will not be refrigerated. Does anyone have any ideas? I really don't want to bring the standard fruit/veggie tray or chips etc.

Melon chunks, strawberries and grapes on skewers

Pickle sandwiches:
Blend 1 pack room temp cream cheese w/ about 2 Tbls mayo
Add garlic powder to taste
Take a loaf of white bread, cut off the crusts and flatten w/ a roller, cover w/ damp paper towel
Drain (really well) a jar of dill pickle spears
Spread cream cheese mix thinly on a slice of the flattened bread,
place a pickle spear at one end and roll up.
Refriderate for a couple hours/overnite - slice into 1/4 inch slices and serve

You can also add finely grated carrots to the cream cheese w/ a touch of sugar, spread on flattened wheat bread, roll, refridge and slice the same way.

Then, take all the crusts, toss w/ melted butter, sprinkle w/ powdered ranch dressing and toast in the oven until nice and cruncy and serve as bread sticks - add some jar red sauce for dipping.

You get 2 dishes in 1!

If you guys want something sweet, I have a recipe that I found on the Food Network for Maple Caramel Apples. I've tried them and are really good!!! They are also good for pool parties and beach parties. I also suggest bringing some wine as well since this is your friend's bridal shower.

You could bring a tomato and basil brushetta or a sautted mushroom and feta cheese brushetta. Prosciutto wrapped melon balls. Teryiaki chicken and pineapple bites.

a couple differrent varieties or sorbet would be nice..you could keep them in her freezer until it is time to serve, then scoop them into pretty serving bowls and top with fresh sliced fruit. :-)
