What new food / eating experience can an European expect to have in Jordan? Any specialities I must have. Anything to avoid - and if so why?

Keep away from "grass". My son in law is Jordanian. He cooks real well, but he has made this stuff for us, I don't know what it is called, but it looks like pieces of grass cooked in snot, and doesn't taste far from whay I would imagine grass cooked in snot should taste like. Ecckkk!

A dish called Kibee is an essential try for any tourist in the middle east. The dish is made with ground lamb (beef is used when made cheaply- not as good). However, be aware that the dish is served Neyi (RAW) or baked. If you have a wild side, go raw. The lamb is butchered so that the meat is not contaminated. I rarely eat this dish baked anymore, the raw meat has an excellent flavor.The dish contains Ground lamb, Bulgar wheat, chopped onion, Ground All Spice, and any personal touches which may even include roasted pine nuts. It is excellent raw served on pita and then topped with olive oil or lebin (plain yogurt).

Utensils are not commonly used when eating Mansaf. Guests feast from the communal dish using their hands. Due to the fact that it symbolizes a social community gathering. The grand presentation is placed in the middle of the dinning setting.

you can find alot of things, but try to find arabic resturants,

there's many in amman like :
Tanoreen
Reem EL Bawadi

and some others u can ask the hotel or anything

try the jordanian traditional food " MANSAF"

You'll have to try the Whole Lamb or shish taouks & grape leaves!
