Vietnamese people also eat them raw, slice and mix them with other veggie to make Vietnamese salad (nộm)

the salad dressing is made from fish sauce (nước mắm), lime juice, vinegar, chilly sauce if you want it spicy. you could add peanuts as well but remember to do it just before serving.

remove the outer portion and simply boil.best with fish sauce.or you use it as vegetable for sinigang fish or pork with tamarind extract.
