The commercial lemon industry got its start during the California Gold Rush in 1849. Scurvy, a disease caused by a deficiency or lack of vitamin C, became very common among California gold miners. Food was scarce and the lack of vitamin C in the miners' diet caused Scurvy. When it was discovered that lemon juice containing vitamin C could prevent scurvy, the demand for lemons increased and additional lemon trees were planted to meet the demand.
There are many different varieties of lemons, but it's hard to tell the difference between them. Lemons are very useful citrus fruits. Although they are often too tart for eating, their juice is used to flavor everything from fish to salads and fruit desserts. Lemon juice, low in calories, adds flavor and "zip" to foods and is a good substitute for salt, salad dressings and sauces. The juice from 6-8 lemons makes about 1 cup of fresh lemon juice. When it's hot outside, make fresh lemonade. It's a great way to rehydrate yourself and quench your thirst!

The best lemons are heavy for their size and have a fine-textured skin. Deep yellow lemons are usually more mature than light yellow ones and not quite as acid. One lemon contains 35% of the vitamin C your body needs every day.

Limes have a flavor similar to lemons, but are more fragrant and less acid. Limes are also important for their juice. When selecting limes, choose those that are firm and heavy, this means they have lots of juice. Depending on the type and size of the lime, it will take between 6 and 9 to make 1 cup of fresh lime juice.
For hundreds of years, British sailors have eaten limes and their juice to prevent Scurvy on long sea voyages.

Besides the color and the size(lime sare usually smaller) I think lemons have more gass content in them.(you can check by holding a vick lighter lit and take a peeling and squeeze it open until the juice hits the flame and watch it flame up from the escaping gas.
They are from the same family tree and basically limes are from the lemon seed (grown from a lemon seed) reather grafted into a true lemon tree. Thatr's how it was explained ot me but not sure.

They are both citrus and have similar shape but they taste completely different and are different colors.

Lemons are more sour. Limes aren't really sour at all in my opinion.
