The Hotel bar at the Holiday Inn Parkview. It's a pretty ritzy establishment. The China Fleet Club is a good place too.

Sentosa Island is sort of an amusement park/water park. Usually a good way to kill a day. Also, check out Newton Circus for international food booths. Chinatown is also pretty fun. It is a series of food booths all located in one central building.
