I made an almond burger yesterday, but there is too many ingredients. I put in soaked almonds in a blender, carrots, glove of garlic, all kinds of spices. (Total of nine ingredients.) Could it be any simpler than that?

VEGGIE BURGER:
1 small zucchini, grated
1 medium uncooked potato, peeled and grated
1 medium carrot, grated
1/4 cup grated onion
3/4 cup egg substitute
Pepper to taste
Slices whole wheat bread, toasted
Sliced red onion and lettuce leaves, optional

In a bowl, combine the first six ingredients; mix well. Pour about 1/2 cup batter onto a hot griddle lightly coated with nonstick cooking spray. Fry for 2-3 minutes on each side or until golden brown. Serve on toasted bread with onion and lettuce if desired. Yield: 6 burgers.

Bean burgers:

2 1/2 c (5 servings) dry beans, soaked then cooked. These are good with black beans, but sometimes have a tendency to be a little dry after a day or so, soy beans keep them moister longer due to the fat content
2 T chopped garlic
1 t cumin
1 T soy sauce
1 T hot sauce
3/4 cup to 1 cup of soy flour
1 egg, optional. The original recipe I had used egg, and used garbanzos and besan flour. Along the way of flirting with veganism but staying vegetarian - I tried it both with and without the egg. It adds a little extra moisture, that's about it.

Put beans in food processor with spices. You can experiment with spices based on your flavor preference. I imagine if you prefer a more "veggie" veggie burger, you could add in chopped veggies, or rice or some of the things in the kind that have veggies, personally - I like my veggies on the side!
When well pureed, add soy flour until blended. 3/4 cup with make for a moister burger, but will be hard to handle probably (they're sticky to form) 1 cup will dry out faster within a day or two being stored in the fridge in containers.

Form into eight patties, place on sprayed baking sheet, broil five minutes each side. I tried frying them in oil once too - but, they were quicker to fall apart because I was still working with the recipe.

here is a good simple vegetarian "burger". buy some yellow squash that are really big (usually for fried squash or steamed you want small, but for this the overgrown ones are good)...cut into 1/4 inch slices or thicker...marinate in dressing of your choice...italian works, or tomato/bacon...i am not vegetarian, so real bacon doesn't bother me, but i think there is a fake bacon kind, too)...for a few minutes, then grill. toast your buns and put anything you want on it, like you would a burger. i love it with grilled onions, lettuce and tomato. it tastes really good, and you won't miss meat for this meal, anyway. i like to put it on those fancy buns that have the grilled onion or poppy seeds on the outside of them.

Ball up some grass really tight. Flatten it out. Add bun and ketchup and stuff. Eat.
