"EMERIL'S DEVILED EGGS

Ingredients needed:

* 1 dozen hard boiled large eggs, peeled
* 1/2 cup Mayonnaise
* 1 tablespoon plus 2 teaspoons Creole or other whole-grain mustard
* 2 teaspoons Emeril's Original Essence
* 1/4 teaspoon cayenne pepper
* Pinch of salt
* 1/4 teaspoon paprika


Slice the eggs in half lengthwise and carefully remove the yolks. Press the yolks through a fine-mesh sieve into a mixing bowl. Add the mayonnaise, mustard, Essence, cayenne, and salt. Stir to blend well. Spoon (or pipe with a pastry bag) the mixture into the egg whites. Cover and chill for at least 1 hour. Sprinkle with the paprika just before serving. (If the paprika is added too early it will stain the eggs.)

"Caramelized Salmon Deviled Eggs

1 (6-ounce) salmon fillet
Salt
Freshly ground black pepper
1/2 cup sugar
1 dozen hard-boiled eggs, halved
1/2 cup mayonnaise
1 tablespoon minced shallots
1/2 fresh lemon, juiced
2 ounces sevruga caviar

Season the salmon with salt and pepper. Dredge the salmon in the sugar, coating well. Heat a small saute pan, over medium heat. When the pan is hot, add the salmon, and sear for 2 to 3 minutes on each side, until the salmon is caramelized on both sides. Remove from the pan and cool completely. Flake the salmon into small pieces.

Place the egg yolks in a mixing bowl and the whites on a serving plate. Season the whites with salt. With a fork, mash the egg yolks. Add the salmon, mayonnaise, shallots, and lemon juice. Mix well. Season with salt and pepper. Fill the egg whites with the salmon mixture. Cover with plastic wrap and chill completely. Remove and garnish with caviar."

add eggs to cold water bring to a simmer once at a simmer and this is crucial cook for ten minutes and take off stove and run cold water over the eggs until cool enough to touch peel and cut in half vertically take out the yolk and mix with mayo granulated garlic onion powder and mustard powder. salt and pepper to taste you can then spoon this mixture back into the egg white or for a special touch us a piping bag and make a rosette then sprinkle with paprika make a day ahead of time for best flavor

Boil the eggs for 10 minutes. Cool them quickly by putting them under running cold water. That prevents the yolk from turning gray on the edges. Peel, cut in half, mix yolks with mayonnaise and what ever other flavorings you might care for such as salt, pepper, mustard, pickle relish. Garnish with paprika, dill or an olive.

I can make a mean deviled egg! Every year for Thanksgiving that is one of the things I am always requested to bring!

they are good if made right... take your eggs put them in a pot cover them with water heat to a boil then turn the stove off cover the eggs and let them sit in the water for 10 to 15 mins. (this will help you not to get a green yolk, it will stay yellow.) pour off the water and rinse the eggs in cold water (make sure your eggs are cool to the touch). crack the eggs cut them in half scoop out the yolk and add to a bowl. in the bowl add salt, pepper, miracle whip, mustard, relish, and sugar. then stir with a fork so you can mash up the yolk. add the the mixture back in the egg halves then sprinkle with paprika and parsley. (chill serve cold.)

boil, cut in half, mix yolk with miracle whip, yellow mustard, splash of sweet pickle juice , stir, put back in egg, sprinkle top wtih paprika.

boil, cut in half, scoop out the yolk, mix with low fat mayo , yellow mustard, salt , pepper, scoop back into eggs , sprinkle with paprika. yum!
