Can anyone share ANY simple recipes for vegetarian food? I'd love to compile all kinds of recipes and food from all over the world ^_^

Here are 2, courtesy of Kraft Foods. Food Network has 3,916. Enjoy!

Vegetarian Pita Pockets

1 cup chopped fresh broccoli
1 cup KRAFT 2% Milk Shredded Reduced Fat Cheddar Cheese
3/4 cup canned chickpeas (garbanzo beans), drained, rinsed
1/4 cup KRAFT LIGHT DONE RIGHT! Cucumber Ranch Reduced Fat Dressing
4 whole wheat pita breads, cut in half
4 large lettuce leaves

TOSS broccoli, cheese, beans and dressing.
LINE pita bread halves with lettuce; fill with broccoli mixture.

Vegetarian Chili Mac

1 pkg. (7-1/4 oz.) KRAFT Macaroni & Cheese Dinner
1 cup canned kidney beans, drained, rinsed
1 cup canned diced tomatoes
1 tsp. chili powder

PREPARE Dinner as directed on package.
ADD remaining ingredients; cook until thoroughly heated, stirring occasionally.

1 vegetarian, boned and skinned. Marinate with lime juice for about an hour then slow cook over an open hardwood fire for about 12 hours. Feeds about 4 meat eaters. Delicious. Even better if they are free range vegans.

tablespoon vegetable oil
1 onion, chopped
4 cloves garlic, minced
6 cups canned kidney beans, drained
2 cups water
3 tablespoons chili powder
2 teaspoons ground cumin
4 teaspoons prepared mustard
1 pinch cayenne pepper, or to taste
3 tablespoons soy sauce
4 cups cooked and mashed sweet potatoes
12 (10 inch) flour tortillas, warmed
8 ounces shredded Cheddar cheese

DIRECTIONS:
Preheat oven to 350 degrees F (175 degrees C).
Heat oil in a medium skillet, and saute onion and garlic until soft. Stir in beans, and mash. Gradually stir in water, and heat until warm. Remove from heat, and stir in the chili powder, cumin, mustard, cayenne pepper and soy sauce.
Divide bean mixture and mashed sweet potatoes evenly between the warm flour tortillas. Top with cheese. Fold up tortillas burrito style, and place on a baking sheet.
Bake for 12 minutes in the preheated oven, and serve.
