Do a bunch of finger foods and salads. I just did this for 100 people this weekend. Cut up a watermelon, chips, salsa, peppers, pickles, olives. You can get these things called Aram Sandwiches (not sure of spelling) from the deli at the grocery store. They are like giant tortillas with cream cheese, meat and other good stuff in them. The deli makes them however you want. Then make some good salads that don't have mayo in them. My family favorite is spaghetti salad-boil thin spaghetti noodles, let cool, chop up green bell pepper, black olives, red onion. Then you put a can of diced canned tomatoes with the juice (i like to buy the ones that have garlic and basil) and all the stuff you chopped up on the noodles. Then you put a bottle of your favorite Italian Dressing on it (I like Bernstein's). If you want to go fancy you can also put in marinated artichokes and/or mushrooms. I also bought those frozen shrimp rings kept them frozen till we left and then they were perfectly defrosted and cold when we were ready to eat. (don't worry about them keeping as they won't last long). I also made a vegi platter w/ ranch dip and a salami and cheese platter. Good luck let me know if you need any more ideas.

You could have everyone bring a covered dish.
Or... do hoagies: Lay out 10 large sheets of aluminum foil on your dining room table/kitchen counter, on each put a loaf of Italian bread, split open, layer cold cuts and cheeses on there, top with shredded lettuce (buy it already done near the salad mix at the grocery store), sliced tomatoes, drizzle a little lowfat Italian salad dressing on there, shut 'em, slice each loaf into four pieces (careful not to cut through foil), wrap 'em in sheets of aluminum foil, stack 'em in the fridge til time to leave.
If you're not hard up for cash, Subway does party subs and gives a discount for large orders.
Either way, load subs into a cooler with blue ice. Load drinks into another cooler with real ice. Buy those individual bags of chips like you pack in a lunchbox - 45 is good for 30 people - get a birthday cake at Costco and ask them to freeze it for you til pick-up time, it'll be thawed and perfect to serve by the time you're ready.

What about throwing some meatballs in a crock pot heating them up and bringing the crock pot along? It is insulated enough to have meatball subs. You can easily make a pasta salad without mayo to bring along as well. Put in fresh herbs and diced tomato with a vinegrette dressing. That way you dont have to worry about the mayo spoiling. Bring along some chips and rolls and you have a satisfying meal. If you really dont feel like cooking use frozen meatballs and canned sauce spiced up with garlic and fresh herbs and buy a bottles vinegrette...easy as can be!

I just had a 1st b-day party and I had to cook for 150 people and bought Ralph's fried chicken(which by the way is really good) I made macaroni salad ...very easy, and I also made ambrosia which I bought 2 xtra large cans (from smart and final) of fruit cocktail added mini marshmallows and whipped cream .
The meal was great , everyone loved it !

Fruit salad, veggies and dip and a lunch meat and cheese tray with bread. People can make their own sandwiches. Also lots of snack type items like chips and pretzels. If everyone is running around the lake, they won't want really heavy food anyway.

Order a pre-made 8 foot long submarine sandwich from To Go's or Subway. You can also set out platters with meat, cheese, lettuce, etc... and have different types of bread, rolls or croissants so people can make their own sandwiches. Costco sells awesome pre-made platters. Have vegetable & fruit trays, potatoe salad, pasta salad or a green salad on the side. You can get these pre-made at Costco also.

If you're gonna be at the lake, my guess is that its' gonna be warm. I would serve subs. You can buy them at your local supermarket pre-made, ready to go. Subway also makes "party" subs. I'd buy some chips, assorted cold salads (potato, pasta) and maybe have a veggie tray. This will be nice and cool and not too heavy. and of course make sure you have plenty of assorted beverages.
