this is my personal homemade recipe...

in a food processor of blender, blend 1 can of chick peas with 1 small clove of garlic (half a clove if you dont want it too strong, a bigger clove for more garlic flavor)....while blending, add a pinch of salt (about half a teaspoon) and a tablespoon of fresh lemon juice (i sometimes add more for flavor). while still blending, slowly pour in extra virgin olive oil. there is no exact amount of oil...just enough to get it to the consistency that you like...some like it thicker, some like it thinner...the more oil you add, the thinner it will be.

taste it to see if it needs more salt, garlic, or lemon juice.

ENJOY!!!

for different flavors, at the end, i like to add half a can of pitted black olives (the green olives dont taste good in the hummus). dont blend the olives in!! just pulse in the food processor so the olives stay chunky.

you could add roasted peppers at the end instead of black olives. pulse in...do not blend all the way!!!

2 cloves garlic—roughly chopped
¼ cup lemon juice
¼ cup water
14 oz (400g) canned chickpeas (garbanzo beans)—rinsed and drained
½ cup tahini
1 teaspoon sea salt


PLACE all ingredients in a food processor or blender and process until smooth, scraping the sides occasionally.
Variations: If you like a spicier hummus, add a small red chili (chopped) or a pinch of cayenne pepper, or try a little cumin for a more exotic variation.

Tip: Prepare extra quantities of hummus—it can be refrigerated, covered, for up to 1 week and frozen for up to 3 months.

As a mediterranean native I have a long experience with Hummus. In fact it is my everyday breakfast.
Please do not use anything from a can. You can easily cook dry peas and get much better results. Other than that most of the recepies looks good.
Tip!: once the water have boiled add half teaspoon of soda powder to speed up the cooking process. add salt at the end of the cooking.

yummy hummus.
2 cups canned garbanzo beans, drained
1/3 cup tahini
1/4 cup lemon juice
1 teaspoon salt
2 cloves garlic, halved
1 tablespoon olive oil
1 pinch paprika
1 teaspoon minced fresh parsley

1. Place the garbanzo beans, tahini, lemon juice, salt and garlic in a blender or food processor. Blend until smooth. Transfer mixture to a serving bowl.
2. Drizzle olive oil over the garbanzo bean mixture. Sprinkle with paprika and parsley.

SPICY HUMMUS:
1/4 cup packed fresh parsley sprigs
2 Tablespoons chopped onion
1 garlic clove, peeled
1 can (15 ounces) chickpeas or garbanzo beans, rinsed and drained
2 Tablespoons sesame seeds, ground
2 Tablespoons cider vinegar
2 teaspoons soy sauce
2 teaspoons lime juice
1 teaspoon honey
1 teaspoon Dijon mustard
1/4 teaspoon salt
1/4 teaspoon each ground cumin, ginger, coriander and paprika
In a food processor or blender, combine the parsley, onion and garlic; cover and process until smooth. Add the chickpeas, sesame seeds, vinegar, soy sauce, lime juice, honey, mustard and seasonings; cover and process until smooth. Store in the refrigerator. Makes 1-1/2 cups.

SUN-DRIED TOMATO FLAVORED HUMMUS:
1 can (15 ounces) garbanzo beans or chickpeas, rinsed and drained
1/3 cup reduced-fat mayonnaise
1 Tablespoon Knorr Sun Dried Tomato Pesto Sauce Mix
1 teaspoon lemon juice
In a food processor or blender, combine the beans, mayonnaise, sauce mix and lemon juice; cover and process until blended. Store in the refrigerator. Makes 1-1/4 cups.

LEMON GARLIC HUMMUS:
3/4 cup vegetable oil
3 Tablespoons lemon juice
2 cups garbanzo beans or chickpeas, rinsed and drained
2 teaspoons minced garlic
1/2 teaspoon salt
In a food processor, combine the oil, lemon juice, beans, garlic and salt; cover and process until smooth. Store in the refrigerator. Makes 1-1/2 cups.

Take a can of chickpeas
blend with 1 tablespoon oil (preferably olive oil)
and 1/2 tablespoon lemon juice
Add garlic if you wish. Serve with more olive oil and bread and fresh herbs of your choosing. Yum!
