I know what we are having for dinner but have no idea about the desert. I want something cheap, low fat and tasty any suggestions?

strawberries and cream yum yum.....

but get low fat cream or miss the cream and use low fat ice cream

baked alaska, its cheap but gorgeous.

buy a pre made sweet pastry case
whip 4 egg whites until stiff (okay boys go away) and mix in 1 tablespoon of half sugar or canderel whatever you use
place fresh fruit around the inside edge of the pastry case
leaving enough room for a square block of vanilla ice cream
keep a little bit of fruit back to decorate the meringue
keep fruit & pastry case in fridge ice cream in freezer until you have finished the main course, keep oven on high-medium heat quickly put ice cream in middle of case then top with meringue making sure that all the fruit & ice cream are covered decorate with the fruit you have saved bake in the oven for about 5 mins whilst your collecting the plates take out and serve with cream if you fancy but its not neccessary. If you choose this I hope you enjoy it, my guests do when them come to dinner I am not allowed to do a different desert now its that popular LOL

Angel Food Cake with fresh fruit. Also a nice topping for the cake is to take fat free strawberry cream cheese and mix with fat free or low fat cool whip. YUMMY!

How about an angel food cake with low fat cool whip in the various flavors. They have Chocolate, Strawberry, French Vanilla, Plain, etc.

Okay, I'm assuming that you can make a cheese cake base? (Just in case) crushed digestive biscuits, melted butter and mix(absolutely no sugar). Put in the tin, chill.
Get one jar of nutella, 1 Philadelphia and one small fresh cream.
In a mixing bowl, beat the Philadelphia to remove lumps, add soft nutella and cream, whisk lightly just to mix altogether.
Spoon into dish( the mix should be similar in consistency to whipped cream.)
Top with roughly chopped white chocolate(you can use buttons) and pistachio nuts(if you can find them, not essential)

Once you have all ingredients bought, this should not take any longer than 30 minutes to make. It sets in about 15 minutes, and is totally delicious

Pavlova's always tasty and great at this time of year. Use fresh, ripe strawberries or raspberries and a huge dollop of cream on a meringue base - you can buy them. Quick, tasty and (apart from the cream) low fat.

Keep it simple........and Interesting. How about opening a can of Lychee, ( a tasty Chinese grape-like fruit) and serve with Ice-cream. A little drizzle of stawberry sauce adds to the delight. I am sure you can buy canned Lycheee in most supermarkets

CHOCOLATE MOUSSE

1 pack chocolate instant pudding
2 small tub2 of fat free cool whip (or LITE)

Mix 1 tub of cool whip with the pudding mix. Refrigerate for 10 minutes.

Layer mousse and cool whip in wine glasses.

Top with a cherry or strawberry for looks and VOILA!

Low fat. Low cal. Looks great. Costs maybe $5.

It all depends on the rest of your menu, what will you be serving as drinks and her age... If you served something light you may choose a sweeter desert (better for last) or if you went all the way with full on menu, then a light fruity desert (whatever fresher you can find from local producers). XX

it is summer, and if you can get fresh blueberries, i have the recipe for you. it is chilled blueberry soup. you will need:

1 quart fresh blueberries
1 cup sugar
1/4 cup fresh lemon juice
1/2 teaspoon lemon zest
1 container of your favorite vanilla yogurt

combine 1st four ingredients in a food processor. process on high for 1 minute. run mixture through a strainer. cook on medium heat until boiling, then remove from heat. allow to cool, and then chill. serve cold, with a swirl of the vanilla yogurt in the center. this dessert will impress even the most critical.

Buy a box of Hershey's Dark Chocolate Brownie mix. When you're making the brownies, stir in 1/2 - 1 cup of chocolate chips. Serve with ice cream if you want. This is my old stand by insta-dessert; people always think the brownies are amazing. "Can I have your recipe?" :o)
