Yes.... there are actually two ways. One is a form of composting and the other is called bio-gas methane production. Both can produce substantial amounts of energy depending upon your infrastructure, its needs, and what you consider substantial. Bio gas generators using feces and vegetable matter power entire villages and small cities in some places in the world. It has also begun to get high tech in more industrialised countries using garbage that used to go to landfills. Several project pilot sites use these on government installations as well and the trend to use them is gaining a lot of momentum and making "garbage" a substantial business in many places.
Also... in the same vein as the lemon post... you can cut the end off an extension cord, attach two nails which you put in either end of a large potatoe, and plug it in. It will glow, sizzle, and then explode. Not exactly creating energy, but a good example of existing energy (sort of...lol) in a veggie. Have fun:).
