I had a Mexican night for Super Bowl party. We put out both hard and soft shells, taco meat, grilled steak and chicken, grilled onions and peppers, chopped onions, refried beans, shredded cheeses, lettuce and tomatoes and let everyone make their own thing.
Some made tacos, others made burritos or fajitas. It's all the same ingredients in things, just a matter of how you put em together. Done this way, everyone gets what they like and I only had a few pans to clean up. You could get fancier than I did and add in beans and rice, Spanish rice, seafood for the taco bar or whatever, but this way you can make everyone happy and not have to do all the work.

Take flour or corn tortillas and cut them into triangular pieces and fry them. Use them instead of store bought tortilla chips. At most grocery stores there is a mexican produce section. There are these orange thins that look like wagonwheels. Thay are called doritos.(not the chips) They are small, but when you fry them the increase about 4 times its original size. They are delicious with any Mexican meal. You best beat would be to buy lettuce, tomato, refried beans, soft tortillas, taco shells, shredded cheese, black olives, green and red peppers, onions, jalepenos ,nacho cheese, etc. Then you can set up a build your own burrito or taco station. It will be fun for people to make their own food and also ideal for picky eaters who might not like certain ingredients.
For dessert you could serve sopapillas and/ or fried ice cream.
Don't forget the pinata filled with candy and toys.

Buffet style Burritos. It would be so easy to have everything out in bowls, and then just have the tortilla's heated. That way everyone can add what they like. Try with seasoned beef and chicken, refried beans, cheese, tomatoes, lettuce, salsa, guacamole, sour cream, olives, jalapenos, etc. Plus you can prepare most of that ahead of time, and just pull it out of the fridge. More time to mingle and enjoy the party! Happy birthday by the way.

Sour Cream Chicken Enchiladas. I'd post a link to a recipe online, but my firewall prevents most of the internet. I'd goto www.foodtv.com and search there.
This one is a stupendous crowd pleazer of my own. It took me and some friends all summer to get right:
All you need: Jalapenos, cream cheese, strawberry jelly, and bacon.
Take the cream cheese (16 oz per 16 oz japs) and soften it in the microwave. It's ok if it's runny. Add 2 tblspoons jelly for every 16 oz cream cheese. Mix really well, then put in fridge.
While the bacon (one pound per one pound of jalapenos)is cold and in the package, slice in half...put back in fridge.
Get a bunch of jalapenos....like 1 pound for every 8 guests. You want big fat ones. Slice them in half from stem to tip...longways. Make sure you are wearing some rubber gloves for this. Using a spoon, clean out the insides so it's nothing but green (that little white strip in the jap is SUPER hot.
Now, by now, your creamcheese should be back to semi-solid. pull it out of the fridge, and get ready with your japs. Spoon the cream cheese into the jalapeno, and put one of the 1/2 strips of bacon on top. And repeat until you have enough for everyone.
You can pre make these the night before and have on any kind of tray that will work.
TO COOK:
In order for this to turn out right, you have to cook the japs on a raised surface...like a broiler pan. You have to allow for the juices to fall, and get out of the way. You can also do it on a grill. Only cook as few as you need at a time.
Cook for about 15 min at 350 degrees. If you want the bacon to get a little extra crispy, turn on the broiler for a minute or two.
These are spicy, but because of the sweetness from the jelly, and the fat from the cream cheese, it's completly tolerable.

Go w/ the buffet style, but have a george forman type table top grill (the small one) so people can make quesadillas. Be sure to have hard and soft shell tortillas. Get the smaller ones - easier to handle. Grab some of the multi grain ones, too if you can find them - have a nutty taste when toasted.
For desert, have ice cream and toppings to go in the shells for desert burritos!

I would just have a table full of side dishes. 7-layer dip, salsa, guacamole, etc. You could have tacos, fajitas, enchiladas. There really is a lot of things that you could do. Go to www.allrecipes.com and there is a tab just for Mexican cuisines and there are 100's of recipes.

Tacos and Taquitos are good finger foods...Enchiladas are good as well. Make sure to also have the right sides for your food like Beans, Rice, Salsa, Guacamole and sourcream.

do a taco bar...fillings can be fish beef and chicken...i made a chicken filling by pressure cooking and all the other fixings
a few chicken thighs, 1 1/2 c broth and 12 oz fresh salsa..
pressure cook rocking 4 mins...4 mins rest then water cool...
shred with 2 forks...absolutely awesome....
