Are they truly radishes...what kind...how are they fixed?

When you are talking about "salty radishes" I think you are referring to the Chinese version of radishes. They are referred to as radishes, but cultured in a different way, such as kimonos from evening gowns.

As for how are they fixed...if you are meaning the description of how they're cooked best, then you slice them in slices as circles cut in half.

I believe they are truly radishes and salted too, but you could contact the below Restaurant and ask them.

"A popular rice noodle dish from Thailand. The noodles are pan fried with tamarind sauce and dried shrimp; salty radishes, fresh roasted peanuts and bean sprouts."

They are picked mustard greens. You use mostly the stem portion. Which in Chinese is called 'the head' of the vegetable. The Chinese name for it translates to 'vegetable head'. You don't want to cook it too much especially not on high heat which is needed for the beans. You add them towards the end together with chopped green onion.
