Jamaican Jerk Mahi Mahi with Coconut Curry Rice and Key Lime Vinaigrette

Makes 4 Servings

Don't be put off by this long ingredient list; this dish actually comes together quickly. To give the mahi mahi intense jerk flavors, the fish sits in a wet marinade overnight and just before cooking, gets a dust of spice mixture. Both the marinade and the spice mixture can be used with other fish as well as chicken, beef, and shellfish.

For Wet Marinade:

2 tomatoes, chopped coarse
1 onion, chopped coarse
1 bunch scallions (green part only), chopped coarse
2 garlic cloves
2 tablespoons fresh thyme
2 tablespoons sugar
2 tablespoons hot sauce
1 teaspoon kosher salt
1/2 teaspoon allspice
1/4 teaspoon ground clove
4 6- to 8-ounce mahi mahi fillets

For Island Spice Mixture:

2 teaspoons freshly ground black pepper
1 teaspoon kosher salt
1 teaspoon sugar
1 teaspoon paprika
1 teaspoon garlic powder
1 teaspoon onion powder
1/2 teaspoon cinnamon
1/4 teaspoon ground nutmeg
1/4 teaspoon cayenne pepper

For Rice:

1 teaspoon vegetable oil
1/2 onion, diced
2 teaspoons curry powder
1 bay leaf
1 cup rinsed rice, such as popcorn rice
a 15-ounce can coconut milk
2 teaspoons sugar
1 teaspoon kosher salt
2 teaspoons vegetable oil

For Vinaigrette:

2 tablespoons minced cilantro
2 tablespoons minced yellow bell pepper
1 tablespoon fresh lime juice
1/4 teaspoon sugar
4 tablespoons vegetable oil
kosher salt to taste

To Make Wet marinade:

1. In a food processor combine all the marinade ingredients and process until smooth
2. Transfer marinade to a bowl and add mahi
3. Chill mahi, covered, up to 24 hours

To Make Island Spice Mixture:

1. In a small bowl combine spice mixture and set aside

To Make Rice:

1. In a medium saucepan heat oil over moderate heat
2. Add onion, curry powder and bay leaf and cook 4 minutes, or until onion is just translucent
3. Add remaining rice ingredients and cook, covered, 15 to 20 minutes, or until cooked through
4. Remove mahi from marinade and sprinkle about 1 teaspoon of island spice mixture on both sides of each mahi fillet
5. In a large skillet, preferably cast-iron, heat 1 teaspoon oil over moderately high heat until hot but not smoking
6. Add 2 mahi fillets and cook 2 minutes on each side, or until cooked through
7. Cook remaining mahi in same manner using remaining teaspoon oil

To Make Vinaigrette:

1. In a small bowl whisk together cilantro, bell pepper, lime juice, 3/4 teaspoon island spice mixture, and sugar
2. Slowly whisk in oil and season with salt
3. Serve mahi over rice, drizzled with vinaigrette
