There are many ways to prepare and consume veggies, from including them in sandwiches to eating them raw. But here are a few thoughts about some forms of preparation you might consider. Steaming veggies is healthy and delicious. You can steam everything from beans to cauliflour. If you bake fish, fowl or meat, try putting veggies in with them, such as chopped up carrots, corn, beans, onion, celery, etc. GOOOOOD! You can shiskabob them, along with meat if you like, and cook them on the barbecue. In fact, try barbecueing asparagus spears next time you start up the grill....you'll love 'em. Another way to cook up veggies is to WOK them....you don't need to use oil to stir fry by the way. A small amount of water works fine....and you can try adding a bit of Pam if you'd like.

I made a White Bean and Vegetable Stew with a Red Wine Sauce tonight. It is delicious, and from their website.

Also, when you go to the market, try a new and unfamiliar fresh veggie. I bought purple green beans (for the above stew). I was disappointed to see that they turned green when cooked! At least I tried.

Cut up fresh veggies and have them as snack. They are very flavorful this way.

If all else fails, add bacon grease to veggies when you cook them.

Grilled Vegetables Recipe #131084
This medley of bell peppers, zucchini, eggplant, and red onion can be served on its own or as a side dish.
1 large red bell pepper
1 large green bell pepper
1 large orange bell pepper
1 large zucchini
4 baby eggplants
2 medium red onions
2 tablespoons lemon juice
1 tablespoon olive oil
1 garlic clove, crushed
1 tablespoon chopped fresh rosemary or 1 teaspoon dried rosemary
salt and pepper
To serve
freshly cooked cracked wheat (Bulgur)
tomato and olive relish

Halve and seed the peppers and cut into even-size pieces, about 1 inch wide.
Trim the zucchini, cut in half lengthwise, and slice into 1 inch pieces.
Place the bell peppers and zucchini in a large bowl.
Trim the eggplants and cut them into fourths lengthwise, then peel the onions, and cut each of them into 8 even-size wedges.
Add the eggplants and onion to the bell peppers and zucchini.
In a small bowl, whisk the lemon juice with the olive oil, garlic, and rosemary- Season to taste with salt and pepper.
Pour the mixture over the vegetables and stir to coat evenly.
Thread the vegetables onto 8 metal or presoaked wooden skewers.
Arrange the kabobs on the broiler rack and cook under a preheated broiler, turning frequently, for about 10 to 12 minutes, until the vegetables are lightly charred and just softened (Alternatively, cook on a barbecue grill over hot coals, turning frequently, for about 8 to 10 minutes, until softened and beginning to char).
Remove the vegetable kabobs from the heat and serve immediately with freshly cooked cracked wheat and a tomato and olive relish.

eggplant cut into 1/2 inch thick slices poor a little olive oil on them cover them in died tomatos and some grated cheese (if you want). add some chopped garlic and use diced tomatos with jalopino peppers to spice it up bake at 325 for 20 min broil for an additional 5 enjoy. summer squash cut in half long ways scoop out centers mix with bread crumbs diced tomatos garlic etc. whatever you like to taste. i use ground beef but you dont and thats ok. drizzle with olive oil and either bake or place on grill on a cookie sheet till tender about 20 mins at 325. or on grill for same amount of time.

I've always been a fan of raw fresh vegetables. If you have room, try planting a small garden with stuff you like. Working in it will make you want to eat the "rewards" of your time and labor. (And there's nothing like home-grown vegetables.)

My favorite type of broccoli stir fry - I use tofu, but, you could use chicken breast or steak strips. About 5 cups of broccoli, and 1/2 pack of tofu (two and a half servings to transfer for replacement) 2 T of peanut butter, 1 T soy sauce, 2 T water, ginger to taste.

Spray or oil pan, cook broccoli and tofu partially. Mix peanut butter and water together, then add soy - add to mixture, continuing to stir well, cooking to desired texture. When well coated, add ginger to taste.

Use a juicer. That's the best way. Use them with fruits. That way, the fruits overpower the taste of the vegetables. It tastes great!

Wow, lots of veggies out there.
I like to olive oil and garlic them and grill with hardwood on the BBQ grill. Zuchini and yellow squash and onions are the best !

you can grill veggies like squash, zucchini and eggplant.

slice them to the desired thickness, brush each side with olive oil and season will salt and pepper ( i like using grill seasoning)

grill over a moderate flame until veggies start to get grill marks and start to caramelize.

You can also grill peppers and onions this way too.
both are really tasty. Hope this helps
