Your information is wrong. Europeans, at least the French and Italian ones will shoot and eat any bird or wild beast. When I was young, in England, my father used to bring home pigeons to make into a casserole. I didn't like the small bones though. (or the occasional lead shot I found! :-) Partridges are considered to be a special delicacy in England, as are pheasants and grouse, and in Scotland capercaillie too.
Barbara. For your information it was the Americans who killed off the passenger pigeons.

I personally think partridge, quail, and pheasant are some great eats!
Generally, you will find that this distaste of foods is not limited to flying birds, but generally extends to anything that isn't raised on a farm or ranch to eat.
People here (US particularly) have forgotten that food didn't always come from a nice formalized, farm, ranch or factory, and when eating more 'gamy' animals remind them of this fact. They're not comfortable with it.
Folks who originated elsewhere in the world (as well as Caucasians who grew up in the country, as I did) are more familiar with the places food can come from and are more likely to be comfortable with other foods.
While this cultural distaste is not quite as strong as some religious prohibitions of food, it is still quite strong and difficult to overcome.

Eurpoeans eat pigeons, partridges, ducks, geese....so I don't know what you are on about. I guess you have never been there.
The Romans at anything and everything including hummingbirds, larks tounges, sparrows.
Also, we all eat crow from time to time (that's an idiom, you could look it up),

Why eat a scrawny diseased pigeon when you can have a nice meaty chicken or turkey? Besides, they don't sell sparrows at my grocery store.
