if all food can be traced back to its ethnic origin, why not just call it food instead of ethnic food?

I don't really consider french fries and hamburgers "ethnic"

I believe that the distinction comes from whether the food is considered part of the main stream overall. Hamburgers and hot dogs are ubiquitous in America; curry is not.

I think that ethnic groups only call other group's food ethnic. For example, I am American, so I would call food eaten in China "Chinese". But a Chinese person would just call it "food".

Because for some reason, ethnic is now synonymous with "black" or "not-white". Ex. "Ethnic" hair. Everyone has an ethnicity, therefore everyone is ethnic. It drives me crazy that it's misused so much.

Ethnic is foreing to me. I have lived in different countries. SO in each country I live, the next one is ethnic and so forth

Any food that is local is not ethnic food.
For instance Sukiyaki would not be considered ethnic food in Japan.

For non ethnic cuisine, try Californian cuisine.
