It is a light-yellow-colored salad dressing served with the side salad in their lunch specials. The workers there have said that it is their own dressing they make and that it is a mixture of Mayonnaise & Vinegar, but couldn't tell me the rest since they didn't want to give away their secret recipe. Does anyone know what kind of dressing this is and where I can buy or make it?

I`ve eatten there too. I do not know what`s in the sald dressing but it is really good. Like you said it was a mixture of mayonaise and vinegar and may alittle mustard honey....Since they can`t give away their top secret recipe maybe someone will give you a close clue... Try looking in a grocery store by the international foods and maybe you can spot it on the shelf there. It`s something like a hollaise dressing.

The following ingredients would give a mayonnaisey consistency... the yellow color makes me think either curry powder or turmeric is added as well.


Benihana Salad Dressing

1/4 cup chopped onion
1/4 cup peanut oil
2 Tbsp. rice wine vinegar
2 Tbsp. water
1 Tbsp. chopped fresh gingerroot
1 Tbsp. chopped celery
1 Tbsp. soy sauce
1 1/2 tsp. tomato paste
1 1/2 tsp. sugar
1 teaspoon lemon juice
Dash each salt and pepper

Combine all ingredients in blender container or wok bowl of food processor fitted with steel knife; process until almost smooth. Makes six servings. May be kept refrigerated up to one week.

Or could it be a dip like this, w/ mayo mixed in adn then put over salad? Try to get different servers each time and see if you can glean some different info from each one to put the puzzle together!

Benihana Ginger Sauce

5 ounces sliced onion, rinsed in running water for 15 minutes
2 ounces ginger, peeled and sliced thinly
1 lemon, peeled and chopped, juice squeezed
2 cups soy sauce
1 cup vinegar

Combine all ingredients into a blender and mix well. Stir mixture completely before serving. Ginger sauce may be stored in a plastic or stainless steel container in refrigerator for up to one week.

lol - quest question - actually, it is mayo and vinegar, but more vinegar than may, with a light touch of olive oil; and yes, I live in HB - right off of Beach blvd, so I know which restaurant you are talking about :)

I would love to know what kind of vinegar is used so I could try to duplicate this.
