Ingredients How To Mix and Bake
4 cups thinly sliced unpeeled zucchini
1 cup chopped onion
½ cup butter ½ cup chopped parsley
½ teaspoon each salt, pepper and garlic powder
¼ teaspoon each basil leaves and oregano
2 eggs well beaten
8 oz. Shredded white cheese
8 oz. Can refrigerated crescent dinner rolls
2 teaspoons prepared mustard Heat oven to 375 deg.

In a 10 inch skillet cook zucchini and onion in butter until tender, about 10 minutes. Stir in parsley and seasonings. In a large bowl blend eggs and cheese. Stir in zucchini mixture.

Separate dinner rolls into 8 triangles. Place triangles into ungreased 11 inch quiche pan or 12 inch baking dish. Press over bottom and up the sides to form crust.

Spread crust with mustard.

Pour zucchini mixture into crust.

Bake at 375 deg. For 18-20 minutes. Let stand 10 minutes before serving. Cut into wedges and serve. Serves 6-8.

That would be called a QUICHE.
slice your zucchini and place in a ready made pie crust...
Beat 3 eggs and add some powdered onion, a little salt and pepper Add a cup of grated swiss cheese or french emmenthal to the eggs and pour over the zucchini. Cook for about 35 to 40 minutes...
For non vegetarians, you could sautée a few slices of bacon, crumble them, then add to the egg mixture also before pouring it over the zucchini.
A variant would be to sautée some chopped onions until transparent, and add to egg mixture before pouring over the quiche.

I would try a basic quiche recipe with sliced zuccini as a main ingredient. Use fresh herbs to make it special.
