This is a pretty good question, I mean it's sort of a weird food, right? I understand why someone might get addicted to beer or cheesecake, but sushi? However, they are and we do (I can count myself in this lucky group).

I believe the answer lies in the culinary genius of the sushi chef. Few foods manage to combine all the elements of great food that sushi does. Clearly, the presentation of this food is well beyond most, and the convenience of eating is paramount - it's bite-sized! But I believe the real magic lies in the yin-yang combination of complimentary tastes and textures. Crunchy and soft. Smooth and Tangy. Rich and light. Salty and sweet. Truly amazing if you compare it to other foods, no?

Finally, I think one of the most compelling things about sushi is the variety. With just enough choices, you really feel like you're in the driver seat when ordering. Different types (sashimi, maki, etc.), different fish/veg, different presentation. This level of choice all within one food type is a compelling invitation to try it again... and again... and again...

Man, I want sushi, now!

Sushi is addictive because it's so good! It's one of those foods that you like or you don't. There isn't a middle ground with Sushi!!!!! (Or I have never found one.) I love it but my hubby doesn't. And, that's as black and white as it's going to get....... Definitely not a grey area food!!!!!

Serious answer:

It might be because when sushi are "designed", the chef takes into consideration not just texture, appearance and the four "European" taste-kinds (sweet, sour, salty & bitter), but also a fifth, which the Japanese call "umami". Roughly translated to English, this flavor sensation is what you get from amino-acids, and a typical example is the predominant flavour you get from dried seaweed. Once you develop a liking for this type of flavour, it becomes very apparent to you when it is missing!

It's the pristine, briny freshness of the sea in your mouth that just makes the sushi melt away...yum!
