I am wondering if I can freeze fresh zucchini and yellow squash without them being mush when I thaw them. Should I leave the skin on? I have a vacuum sealer, should I use that?

If you plan to cook with them then yeah, freeze them with the skin on and use a plastic bag (or your sealer). But if you intend to eat them raw then they will be mushey or dried out.

Leave the skin on and use your vacuum sealer. This should keep the squash safe from freezer burn, and it will keep them fresh like you just picked them.

I have frozen squash (yellow) before with the skin on cut into chunks and it was very slimy, no taste, and hard to cook when I thawed it. I wouldn't suggest doing this to squash.

Whats works for me is to cut to desired size and freeze in a single layer on a cookie sheet. You will have to do it in batches but it keeps you from having the "one big lump of squash" problem. After they are frozen, transfer to a freezer bag and you are good to go.

THE VACUUM SEALER WOULD BE GREAT YES YOU CAN THE WAY MY MOTHER DOES IT IS SHE SLICES THEM AND PEELS AS IF SHE WERE GOING TO FIS THEM RIGHT THEN AND PUTS THEM IN THE FREEZER DEPENDING ON HOW YOU WANT THEM FIXED THEY EVEN MAKE A SQUASH FRYED PIE BY GRINDING IT AND PUTTING IN FREEZER i DON'T LIKE SQUASH SO I DON'T FOOL WITH THEM BUT THEY SAY THEY ARE DELISH<<<>>>

Blanche them in boling water, then freeze in containers. Do it all of the time. Taste fresh.

yes. usually you leave the skin on and blanche them---cook just to boiling, cool and freeze. i grate my zucchini up and just freeze it b/c i use it for breads.
if you fry them then you can coat them with a base, cook in oven, cool and freeze.

yes, but it usually end up like mush....how about canning instead...pickled squash; squash and tomatoes and garlic, dilled squash spears....
