Enchilada Casserole

Place the tortillas in a 13 x 9 baking pan to cover the bottom

Add a layer of cooked ground turkey (or pork or beef or any meat you choose, like chicken)

Add a layer of sauce (I like tomato sauce)

Add a layer of veggies (black olives, beans, bell peppers, onions, garlic...whatever you choose)

Add your shredded cheese

Repeat until you are at the top

Cook at 350

make enchiladas. Brown some ground hamburger/turkey, with onions, drain, have shredded cheese ready. lightly warm tortillas in fry pan 1 min each side. put in cooked meat/onions, cheese and roll up. put in baking pan seam side down, pour enchilada sauce (canned is fine) over all. sprinkle with more cheese, bake 20-30 min til hot all through. Really good.

drop into a fryer and then fill em with any kind of meat. Throw in cheese or whatever. Put in the oven to melt the cheese. makes very good tacitos. Use Salsa as dipping sauce.

my mom made some sort of casserole by layering corn tortillas, olives, beans, cheese, onions, ground hamburger meat, peppers, etc.

be creative. some of my favorite recipes were ones that we made up with leftovers anyway.
