pickles are cucumbers that have been "pickled" which means soaked in vinager. (I hope you knew that) Since most vegtables are green (with the exception of a few) or some other natural color, it only makes since that cucumbers would be green, and then so would pickles.

Cucumbers are green therefore, pickles are. It is just the way it is.

Not all of them are. Pickled cucumber tends to be; but there are other types of pickles.
