Spinchilada's
1 bunch of fresh spinach (or bag)
12 small corn tort.s
enchilada sauce (I use the package mix)
8 oz sharp cheddar
8 oz monterey Jack
8 oz cream cheese
1 medium onion
jalapenos
Shread the freash spinach. Chop onion, shred the cheese and jap.s, mix w/ hands.
Heat frying pan w/ 1/2" oil in bottom, dip corn torts 1 by 1 in medium/low heated oil. (this will soften them-easier to roll w/o cracking)
spread sauce on both sides of tort, fill and roll. Place in 9x12 cake pan. Bake @ 375' for about 45 min.
Tell the kids it's parsley, they'll love it the first time, and not care if it's spinach after that!

My Mexican boyfriend just loves my baked chili rellanos. They are easy to make, too.
Baked Chili Rellanos - serves 4 - 6
8 to 10 (5 or 6 inches) green chiles, mild
10 ounces jack cheese, grated
5 eggs, well beaten
2 tbsp. butter
1/2 tsp. salt
1/2 tsp. pepper 1/2 tsp. cumin powder
Roast, peel, and seed the chili peppers, or use canned, green chilis.
Layer them altrenately with the grated cheese in a deep, buttered 1 1/2 quart casserole dish.
Mix the beaten eggs, butter, salt, pepper, and cumin powder. Pour this mixture over the peppers and cheese.
Bake 35 - 40 minutes at 350 degrees.

Pineapple Enchiladas
1 20 oz can crushed pineapple
1/4 cup sour cream
2 cups divided cheddar
1 10 oz can enchilada sauce, divided
6 flour tortillas
Preheat oven to 375. In a bowl, mix pineapple, 1 cup of cheese, and sour cream. Pour 1/4 cup enchilada sauce on bottom of 9x13 inch baking dish. Fill tortillas with pineapple mix, roll, and place in dish seam side down. Pour on remaining sauce and sprinkle with remaining cheese. Bake, covered, for 30 minutes. Top with more cheese if desired.

Try making milanesa en salsa roja
fry in medium heat with a little oil little pieces of milanesa about a pound and a half and before it absorbs all the liquid that it makes by itself add some seasoning to taste when the meat is starting to fry in a small pot boil water and add 5-7 dry long red peppers and let them boil until they seem soft then blend them with a little bit of water and pour over the meat then just add oregano and let it shimmer for a little longer. You can eat it with white rice and aguacate believe me it really good and easy to make hope you try it.

most Mexican foods are easy. like taquitos or flutas just put what ever type of meat you'd like in the corn tortilla and roll them, use a tooth pick if your not sure they'll stay rolled and fry them, serve with guacamole, or tostadas, just fry a corn tortilla flat the spread re-fried beans and goat cheese and lettuce and diced tomatoes, serve with salsa, umm, enchiladas have been given to you already so i hope these help
