I agree with potatoes...available in hundreds of varieties, can be cooked by using various methods, used as a significant ingredients in breads, stews, soups, and casseroles. Best vegetable buy for your money.

I'd say broccoli. It is packed with cancer fighting antioxidants and also has most of the necessary vitamins and minerals the body needs. All veggies are good for you - but broccoli packs in the most - it's a bang for the buck.

Cucumber, absolutely, but not straight out of the fridge, then they're too cold...
Better to let them warm up to room temperature, and always remember to use plenty of salad oil to get it nice and slippery...
