My friend used to bring me a dish her mum made (she was from Jamaica) and it was rice, peas and bits of chicken. Can anyone tell me how I can make this?

You adapt the recipe to your taste by adding meat, vegetables or just have it plain.

RICE AND PEAS

INGREDIENTS

3 cups of rice
1 cup of red beans
few sprigs of thyme
1 medium coconut
salt to taste
garlic
2 slaths chive
black pepper
1 qt. hot water
3 or 4 cloves

METHOD
1 . Grate coconut and use I qt. hot water to obtain the coconut milk. Or use tinned or creamed coconut.

2. Place peas in saucepan with coconut milk.

Add clove and garlic and cook until tender.

3. Add remainder of ingredients, simmer until rice is properly cooked

Jamaican Chicken
Prep Time:30 Minutes
Cook Time:30
MinutesReady In:1 Hour
Serves:6

INGREDIENTS:

1 large red onion
3 cloves garlic
1 habanero pepper, seeded
1 tablespoon fresh ginger root
1/4 cup olive oil
1/4 cup brown sugar
3 tablespoons red wine vinegar
3 tablespoons orange juice concentrate, thawed
1 teaspoon soy sauce
2 teaspoons ground cinnamon
1/2 teaspoon ground nutmeg
1/4 teaspoon ground cloves
1/2 cup chopped cilantro
1/2 teaspoon salt and pepper to taste
6 skinless, boneless chicken breast halves

DIRECTIONS:

In a food processor, combine onion, garlic, habanero pepper, and ginger. Pulse until ingredients are minced. Blend in olive oil, brown sugar, vinegar, orange juice concentrate, soy sauce, cinnamon, nutmeg, cloves, cilantro, salt, and pepper. In a container, combine marinade with chicken. Cover, and refrigerate overnight.
Preheat an outdoor grill for medium heat and lightly oil grate.
Grill chicken for 10 minutes per side, or until no longer pink and juices run clear.

Traditionally Rice 'n' Peas are NOT served with Curried Goat for this you use plain boiled rice.

Curried Goat

Ingredients:
1 cup curry powder
3 large sprigs thyme
3 scotch bonnet peppers, finely chopped
2 onions, diced
1 bunch scallions, diced
Salt and freshly ground black pepper
4 pounds goat meat, bone in (lamb meat may be substituted)
1/2 cup chopped fresh garlic
1 carrot, diced
2 tomatoes, diced
1 pound potatoes, diced
1/2 cup chopped ginger
3 quarts chicken stock


Directions:

To make the marinade, combine the curry, thyme, scotch bonnets, onions, scallions, salt, and pepper. Marinate the goat meat overnight.

Remove the goat meat from the marinade. Reserve leftover marinade.

In a hot braising pan, brown the goat meat and garlic. Add carrots, tomatoes, potatoes, ginger, and reserved marinade. Add stock and stew for approximately 1 hour until meat is tender or about to fall off the bone.

I have been with a St. Lucian man for 19 years now and I have learned alot of the West Indian culture and food. I love the food with all the flavours and smells and I have to say there are never any left overs!

go to the store and buy a pound of rice , a pound of dry black eye peas and a pound of boneless skinless chicken breasts. cook the peas according to package directions , cook 2 cups of rice according to package directions. about an hour before the peas are ready add the cut up chicken, you could even marinate the chicken over night before useing it. experiment with your favorite seasonings.

2 ham hocks, with meat still on it or 1 ham bone, with meat still on it
1 teaspoon pepper
salt
1 stalk celery, chopped
1 teaspoon dried parsley
2 tablespoons olive oil or vegetable oil

I don't really care for it, but sounds good suddenly. lol My aunt used to make it for us years ago. I don't remember the recipe, but here's a link for spicey chicken, black eyed peas.

your have to boil the rice and beans together and if it was jerk chicken you can go to any store and buy jerk sauce. once you have the sauce marinate the chicken with it for about 30min-1hour and then bake it (not too sure how long)
and enjoy!
