Good chinese food has nothing to do with the buffets or quick take-out places. Properly prepared, it offers a plethora of flavors, textures, colors, and smells - some good and some not so good.
There are plenty of small and chain restaurants that make good food (Chinese or otherwise). In SF Chinatown there are several good restaurants. Beyond Chinese food, there are good places in the Bay Area making "gourmet" or high quality indian, persian, mexican, japanese, ethiopian, korean, and other ethnic varieties.

Sorry, brother! If your eating it at a buffet....your not eating real chinese food!! I would say however, that those "chinese" buffets and "chinese" fast food places are EXTREMLY OVERRATED!! Go to a place that serves seafood and dim sum on the weekends and you will eat real Chinese food. You've got the right idea when you say that taco bell isn't real mexican food.....same thing with Chinese food. I don't know where you live, but there's a ton of authentic ethnic cuisines where I'm at. I just have to do a little homework. It always pays off. If it's Indian food you desire, then find out where Indians eat. If it's Chinese food you desire....well, you get the picture. Real ethnic food is always ten times better than the fake stuff and usually cheaper!

Those buffets. They've mangled everything to appeal to the masses. I love going to little hole in the wall Chinese places where you have to ask lots of questions since everything is in Chinese. Thai food is getting to be the same. What I hate is the cpmbonation places (Thai and sushi! Chinese and vietnamese!) I do wish there were more "exotic" restaurants.

Not at all. But then again, I do not eat at Americanized Chinese food places. I prefer the real stuff - either over there or make it my self!
But I agree that there should be more specialized restaurants - Indian, Brazilian, Thai and such.

Where I live chinese food isn't overrated...it must just be your area.
If anything...it is 'underrated'. ;]
(I LOVE chinese food)
The only food that I can think of offhand that is overrated these days is Starbucks, but I love that too, so, meh. ;>
