by pulling the stuff up out of the soil they grow in- like fertilizer (cowsh*it for example, or dead things- yes, including dead animals! so much for "won't eat animals or their by-products" for all the "vegans"), minerals, etc.- the plants use these materials in their photosynthetic processes to build their component parts (in other words, to grow) and flavors are a by-product of those processes.
