On low budget i'm a student and don't make that much so its gotta be cheap for me to buy the ingredients

Toasted Grilled Cheese with Green Chile

Place two slices of bread in a toaster oven with a slice of American Cheese on each slice of bread. Top the cheese with roasted green chile (found in the Mexican section of your grocery store in little cans OR fresh if you live in the southwest). Toast until cheese is yummy and bubbly. Enjoy!

Penne w/ vegetables- use extra virgin olive oil!
Yellow and green squash, sliced into half circles
Onions, chopped

When veggies are almost done, add some capers, sliced olives, and some frozen corn- let it all heat up.

Cook pasta, drain, drizzle w/ Extra Virgin olive oil

When everything's done, combine and add thick chunks of real parmesan cheese (Ok, the parmesan is a little expensive, but it's soooo good).

Another (more affordable) is buy a cheap frozen pizza (ie Tony's, $1). Buy some frozen spinach and corn. Shave the spinach and sprinkle onto pizza along with sliced olives, capers, jarred or canned artichokes (optional, but good if you want to spend the money!). Cook as normal! You just spent a few dollars and made a gourmet pizza that would cost you at least $12-14 in a restaurant or store.

I have a vinaigrette that I make and use on all sorts of things.

I take a bunch of parsley (washed and the big stems torn off the whole bunch)

1/2 cup olive oil
1/4 cup apple cider vinegar or basalmic if you prefer
3 (or more) cloves garlic
salt and freshly ground pepper

put the oil, vinegar and garlic in a blender and puree until the garlic is all incorporated. Then add your bunch of parsley and pulse, then blend until you have a thickish green dressing. Add some salt - maybe 1/2 teaspoon and some grindings of pepper. Blend and put on some of the following:

Drain and combine a can of garbonzo beans and a can of kidney beans. Chop 1/2 onion and a stalk or two of celery. Toss with some of the parsley/garlic vinaigrette and let it marinate overnight. YUM.

You can use the same ingredients, but use cooked grain - such as spelt - instead of the beans and make a grain salad.

Or you can cook and dice potatoes, use the onion and celery. Toss with vinaigrette. Add a bit more salt and splash a bit more vinegar on that one. Let it sit for a few hours in the fridge.

You may have to invest a little into olive oil and good vinegar, but it's totally worth it and the rest of the ingredients are super cheap.

Wheat Bread
Cereal (reeses puffs are good and vegan!)
Soy Milk
Beans
Minute Rice
Inexpenisive vegetables (to make salads and grilled meals)
Tofu

and heres a recipe for easy fudge
Quick Chocolate Fudge
Another fast and easy crowd pleaser. Make it just 20 minutes before the movie is going to start and you'll be munching it as you fast forward through the previews.
1 cup maple syrup OR 1 cup corn syrup (if you're poor like me)
1 cup nut butter of your choice (poor people use peanut; rich use cashew)
2/3 cup 100% pure fine cocoa powder, sifted
1/3 cup raw sesame seeds
In a heavy-bottomed pot, heat the maple syrup and nut butter together, stirring constantly over low heat until well combined. Remove from heat and stir in the cocoa powder until well mixed. Pour into a loaf pan or similar casserole dish and press the sesame seeds into the top with your hands or a rubber spatula. Let set for at least 15 minutes in your fridge, then cut into small squares, and eat!.

Mixed vegetables about 1 cup
1 onion
1 small pack of noodles ( pre-boiled )
1 cube vegetable spices
Half tsp garlic paste ( optional )
2 tbsp tomato paste or puree
2 tbsp oil
Salt to taste.

Method:

Chop the onion, and fry it till golden brown. Add garlic, after a minute or so add the spices cube and mix it well and fry for about 1 min. Add the vegetables and stir well. After about 5 minutes add the tomato paste and mix well and cook on a slim flame till the vegetables are down, add a little water to help in cooking and also to have a little gravy to mix the noodles. Add salt if needed as the cube will contain a little salt.
When the vegetables are done then add the noodles and mix well. Close the lid for about 5 minutes so that the noodles will get the flovour of all the vegetables and spices. Then serve the noodles in a plate and if at all you have any cheese left like mozerella or any other, grate it and sprinkle it on top of the served noodles and enjoy your easy to cook and fast meal.

You can buy tofu pretty cheap (in fact, I've got some draining in the kitchen right now). Stir-fry it with curry, tamari & veggies (red pepper, broccoli, snow peas, spring onion, mushrooms, etc.) then serve over brown rice.

If you're on a really, really low student budget, you can't go wrong with ramen noodles or mac & cheese - just add whatever veggies you like to the mix when you prepare it.

I would have to suggest a bag of bean sprouts and firm tofu. First you fry a lil' olive oil with the tofu at the end add the bean sprouts use a lil' salt and pepper as well as soy sauce for seasoning, it's great and cheap. good luck=)

I like bow tie pasta with diced roma tomatoes and diced green pepper. I like the multigrain pasta. One bag or box of pasta two dice romas one diced green pepper. Boil up the pasta, remove heat, strain and return to the pot on a cold burner. Add a little more than a tablespoon of olive oil and the veggies. Mix. Season to taste. I like to add crushed red pepper, black pepper and rosemary to the water with the salt. The pasta takes on some of the flavor. Sprinkle with parmesan if you eat cheese and like that, I do.

You could make a summer pasta. Just buy lots of your favorite veggies and some pasta. Coat with some good quality olive oil and fresh ground black pepper.
