My girlfriend left it at my house last weekend and not sure if should throw it out or eat it! She can't be reached and not sure if still good.

"Homemade kimchi" will stay yummy in the fridge for a couple of months. Store-bought may be full of preservatives to make it last longer. The stuff your girlfriend left behind is almost certainly fine unless it was six months old when she brought it to you!

Kimchee is made by pickling veggies (mostly cabbage) in a very strong salt solution, and the purpose of that pickling is to preserve the veggies. We were eating kimchee for a looong time before anyone even thought to invent the refrigerator, so it's more than safe to eat, I'm sure!

What do you mean by fresh? If you mean fresh taste, kimchi has a lot of varying taste, according to how old it is. Unless you leave it out, I don't think I've heard of kimchi spoiling, the salt in it prevents it from doing so.

Home-made Kimchi can last however much time you want it to. Especially as it acquires a certain taste, three years old kimchi is considered a delicacy.

There's a taste to fresh-made kimchi. If you like that, I suggest you eat it within the first two weeks of buying/making it. After the initial two weeks, kimchi starts to have a more pickled taste.

Store bought kimchi should last a good month or so. It all depends on what kind of kimchi you like.

I would say it should be edible by itself for probably about 2 weeks. After that, when it starts to taste a little too sour, I usually use it to make soup or kimchee fried rice. Both are awesome ways to use up that last bit of kimchee so that I have an empty jar to make more.

Stays fresh for months. Koreans actually like to eat it when it's sour and stinky.

It is already spoiled.........it was buried for 6 months before it was sold.
