This is a potluck party, so I want to bring something unusual and fun that really plays up the engagement. I would love to have some sort of bite-size engagement rings, but I'm not closed off to a dish. Just want something novel and unique. Can be dessert as well. Any suggestions??

Caramel Apple Dip

8 oz block of cream cheese--softened
caramel dip or caramel syrup for ice cream
Spanish peanuts
apples

Spread the cream cheese out on plate. Drizzle the caramel over cream cheese so it coats it evenly. Sprinkle Spanish peanuts on top. Cut apples into wedges--dip briefly in lemon juice so they won't brown. Serve at room temperature.

This is easy to make and delicious. I take it to every party I go to and it is a hit.

Do not bring Ambrosia.

Make Homemade Salsa and Home made chips. I guarantee it will be a smash. People are always amazed at how good it is.

6 tomatoes
Juice of 4 limes
2 TBSP salt
1 cup of shredded Cilantro
1 small Diced Onion

You can multiply this as much as you want.
The only thing is too drain the tomatoes a bit first

Ships. Buy whole corn tortilla and cut them into Triangles and deep fry them and add a bit of salt.

Try Bacon Wrapped Scallops.

This particular recipe is kind of unusual, it has pineapple and tomato and a zesty basting sauce. Very quick and you can grill or broil.

I think it works as a good engagement party dish because it's fun and it joins two great tastes together.

Rumaki. So good and so easy. But it's not that healthy and has meat but who cares, it's a party.

Cut bacon slices in half. Wrap each half slice of bacon around a whole water chesnut (from a can) and secure with a toothpick.

Marinate all of the bacon wrapped water chestnuts in one whole jar of VH Garlic Sparerib sauce and equal parts water.

Let it marinate over night then place them on a cookie sheet and cook at 350 for 20 minutes.

I know it sounds weird but they are unbelievably tasty.

I like jalapenos stuffed and wrapped in bacon. What you do is take fresh jalapenos deseed them and then stuff with cheese or cream cheese or shrimp or a little of both. Them wrap back up with a piece of bacon. You can either cook these ahead of time or throw them on the grill during the party. They are spicy and taste fantastic and are different from a fried popper.

I did chocolate covered strawberries for a party but... I used a flavor injector and put rum (any kind of liquor) in the middle. You have to be carefull not to put too much because it will squirt out of the hole and make the chocolate bad... but. It was a nice treat for people when they bit into it.

I made some without as well for people that didn't want the rum.

Wonton cups.

You get wonton wrappers from the store and put them in a muffin pan and bale them for 5 minutes. You also get ground beef and italian sausage and brown them together. After all that is done put some of the meat mixture in the wonton and put some shredded cheese on top of the meat. Put wontons back in the oven until the cheese is melted. Then serve.

These are super easy to make and will be a huge conversation piece at the party. I used seeded grapes the first time, and that kind of takes away from it. Try seedless, especially if you can get larger ones.

This is SO CUTE!!! Place "crab" onto lettuce-lined platter with mound of your favorite crab dip, surround with shells and crackers if desired! GREAT for parties, picnics and BBQ's!
5 Rhodes frozen rolls, texas, thawed but still cold
1 toothpick, broken into 4 pieces
1 tablespoon butter, melted
1 egg, beaten
paprika (optional)
1 pimento stuffed olive, halved
crab dip (or oyster spread)
crackers
fresh dill sprigs
4-8 servings

1. For the body, join 2 rolls together and press into a flat football shape. Place body on a large sprayed baking sheet.
2. With the next roll, cut enough dough off to form 2 small eyes. Roll each piece into a round ball and place on front of body. To secure eyes, stick a small piece of toothpick in each ball and then stick it into the body.
3. Cut the rest of the roll in half to form 2 arms. Place each arm to the side of the eyes but before the ends of the body.
4. Cut another roll in half to form 2 claws. Then cut each claw off-center almost in half and place at the end of each arm, putting the small part of the claw closest to the body. Roll the last roll into a 12-inch rope. Divide rope into 6 equal lengths for the legs. Arrange 2 legs curving forward and 1 leg curving back on each side. Tuck legs slightly under the body.
5. Brush crab with melted butter, cover loosely with plastic wrap and let rise for 30-45 minutes, or til doubled. (I let mine rise for 1 hour, but 45 minutes would be good)

Ambrosia, It's a fruit salad made with marhmallows(small ones), shredded coconut and whipped cream. Good stuff
