I got this from Gourmet last year, I love it. I serve it with crusty French bread and a green salad for dinner.
cup dried lentils (preferably small French lentils)
1 large garlic clove, chopped
1 teaspoon salt, or to taste
3/4 lb tomatoes, diced (2 cups)
4 large scallions, thinly sliced (3/4 cup)
1/4 cup chopped fresh dill
1/4 cup thinly sliced fresh basil
3 tablespoons red-wine vinegar, or to taste
1/4 cup extra-virgin olive oil
1/4 teaspoon black pepper
Bring 4 cups water to a boil in a 2-quart heavy saucepan with lentils, garlic, and 1/2 teaspoon salt, then reduce heat and simmer, uncovered, until lentils are just tender, 15 to 25 minutes. Drain in a large sieve, then transfer to a large bowl.
Toss hot lentils with tomatoes, scallions, dill, basil, vinegar, oil, pepper, and remaining 1/2 teaspoon salt, or to taste.
Makes 4 to 6 side-dish servings.

Grilled Veggie Chibata Sandwich (italian!)
Loaf of Chibata Bread
Olive Oil
Salt/pepper
Eggplant
Zuccinni
Bell Pepper
Onion
Note: No measurments because you put however much you want
First grill the vegetables using olive oil. Enough so you get the grill marks on your veggies. When grilling onions, use a skewer so it doesnt fall through the grate in the grill. Next toast your Chibbata (in the toaster, very lightly, enough so its warm and slightly crunchy, no brown though) Drizzle bread with Olive Oil, salt and pepper. Layer on veggies, eggplant, bell pepper, zuccini and onion. Makes 2-4. Great lunch.

Baked Corn
INGREDIENTS:
2 cups whole kernel corn
1/4 cup chopped onion
1/4 cup green bell pepper, chopped
25 g margarine
2 tablespoons all-purpose flour
1 teaspoon salt
ground black pepper
3/4 cup milk
1 egg
1/3 cup cracker crumbs
1 tablespoon butter, melted ( = 15 g )

DIRECTIONS:
Preheat oven to 350 degrees F (175 degrees C).
In a large skillet, saute onion and green peppers in the margarine. Using a wooden spoon, stir flour, salt, pepper and milk into the sauteed mixture. Stir corn kernels and egg into the mixture before pouring the entire concoction into an ungreased medium-size casserole dish.
Combine cracker crumbs and melted butter in a small bowl. Pour the mixture over the casserole.
Bake in a preheated 350 degrees F (175 degrees C) oven for 30 to 35 minutes.

Take one or more fresh vine ripe tomatoes and core them. Then slice in quarters and place in a baking dish. Generously spice with salt and fresh cracked pepper and place thin slices of mozerrella on each. Finally top wth a small amount of fresh basil. Put it in the oven and broil at 350 until the cheese is melted.
