Health Salad Recipe #103743
This is a favorite item of mine to order in NYC Jewish delis. So when I decided to make it at home for a BBQ, the first recipe I pulled off of the internet was right on the money. This is "kind of" like a good coleslaw but without the mayo and with a few items added. Use a 4-sided box grater to shred all of the veggies.
1 medium green cabbage, shredded
2 carrots, shredded
1 green pepper, sliced paper thin in small strips
2 kirby cucumbers, peeled and sliced paper thin
1/3-1/2 cup sugar
1 onion, sliced paper thin
1/4 cup water
1/2 cup canola oil or vegetable oil
3/4 cup white vinegar or apple cider vinegar
1 teaspoon sea salt
1 teaspoon oregano
Shred or slice (and I do mean paper thin) all vegetables.
Mix other ingredients and pour over the veggies.
You can make as quickly as a half a day before serving, but it is best to make it so that it can sit overnight.
Refrigerate immediately after mixing veggies and dressing.

Mom's Easy Shrimp and Crab Salad
Medium to Large size shrimp
Imitation Crab Meat
2-3 Fresh Tomatoes (Vine ripe if possible)
1-2 Large Green Bell Pepper
1-2 Vidalia, Red, or Yellow Onion
1large bottle Italian Salad Dressing
Prepare shrimp by deveining and boiling. I usually a quart bag of shrimp that I have previously frozen. Cool shrimp by putting in an ice bath. Tear apart imitation crab meat into bite size pieces. Chop tomatoes into good size hunks. Chop bell pepper into bite size pieces. Slice onion into thin slices.
Add everything into a large bowl and pour dressing over. Marinate overnight if possible and stir along the way. I serve this over regular iceburg lettuce and with captain's wafers. Yummy and easy to prepare ahead for picnics or luncheons.

That sounds absolutely delicious. I usually put in mixed leaf salad, coriander, celery, cucumber, cherry tomatoes and occasionally olives. Then I sprinkle it with some type of dressing, I'm always trying new dressings. I love salad. You've made me hungry now!

raisins, cranberries, and nuts are surprisingly delicious. my mom also sometimes puts mandarin oranges or tangerines inside. I like it when we hard boil eggs and slice them up to put inside as well. super healthy! but if you're looking out for health, watch the dressing more than the contents - some are sooo high calorie and fatty! go for a light vinagrette of some sort, they're great and healthy. My italian dressing is only like 15 calories for every two tablespoons, i'm sure you can find something comparable. :)

I love making all kinds of healthy salads, for one I use the leafy red tip lettuce with some spinach baby leaves, then some very thin sliced onions, either red or the white and peeled,seeded orange slices, sliced peaches, and cherry tomatoes even some wonderful red pepper slices, and you can add asparagus barely steamed just until they are bright green, and pour a wonderful dressing of balsamic vinegar with E.V.O.O. be sure and add a little sugar to the dressing and it is wonderful. Have a Great Meal with your salads.

I love frozen peas! Also sesame seeds or pine nuts. Cashews are great but they are high calorie.
A melon salad with honeydew and grapes and cantaloupes sounds really good for a hot day!

Raw chic peas, a handful of candied pecans (nuts are worth the calories) Any of "SoyBoy" brand baked tofu products cut into chunks. Fat free croutons. Pepitas (toasted pumpkin seeds without the shell on the seed)

Vary the greens, use 2 or 3 kinds, tomato, cucumber, sliced radish, grated carrot or any other raw veggie you like. Watch the dressing, they have hidden fats

Let's see...
Here are basics:
Lettuce, Tomatoes, Spinach, Onions, and sometimes carrots.
Try adding eggs, pineapples, oranges/mangarines, strawberries, sausages, ham, other fruits and meats, and cucmbers/zuchinis.
Don't forget to put all kinds of dressing and ranch on there, too!
