I love artichokes. I need to make sure what I perceive to be the "heart" of an aritichoke is indeed the heart.

Tender, juicy part of the artichoke. Cut the artichoke's tip and when you see the lightest parts in the center, then that's the heart. Always remember, when eating it, it has to be easy to chew. If it's hard, you still have to take some layers off next time.

It's the best part of an artichoke. It's the part you get to after you have taken all the leaves off. YUM !

It is the "meaty" center part of the plant underneath the leaves. Yum.
