I want to introduce a Chinese vegetarian friend to maple syrup.

You don't need an egg substitute -- pancakes work fine without eggs. We make vegan pancakes all the time. Search "Vegan Pancakes" on Yahoo, Ask.com, or Google and you'll get dozens of hits like this:

In University I discovered how to make egg-free pancakes by using a Bisquick recipe and about a tbsp of CORN SYRUP for the egg. They turned out great! You may want to check with your friend about any ingred's you use, Bisquick included. Some vegetarians are very strict, some not so much. Even something that may seem "vegetarian" to you may have strange ingred's that vegetarians won't eat.

If you're making them from scratch you may want to add some baking powder too. But like someone suggested, Heinz maple style beans are the best for a nice maple flavour!

Some Vegetarians eat eggs ( and that's ALL), but that's because the chicken does not have to be fertile to lay an egg so basically that egg will not turn into a baby chick. However if you do eat eggs make sure they are free range chickens and not ones cooped up in little sheds. It will list on a box. Make sure to ask your friends about it.

Either use "egg replacer" from the health food store. (Ener-G brand) or tofu can be used (a large egg is 1/4 cup by volume so use 1/4 cup tofu for each egg, but run it through a blender with the other liquids or you will have nasty tofu lumps!) I use soymilk in my pancake batter with no eggs and have no problems. Waffles are another story all together. You must use lots of vegetable oil in egg free waffles or they will peel apart. Another healthy alternative to egg is flax seed. 1/2 cup warm water in a blender throw two tablespoons of flax seeds on top and blend until you have a gooey mass. (blend slow at first or all the seeds will shoot all over the inside of the blender and stick to the sides and you will have nothing left to blend)

Make the pancakes out of flour, water, and just a dash of vanilla extract. This is a home made recipe that I grew up with.

All natural, no sugar added apple sauce works in place of eggs in a lot of baking recipes.

Maple syrup is delicious on baked beans, baked squash (especially butternut), sweet potatoes, carrots, and scrumptious on baked apples. Also pleasant on oatmeal, granola, and even grapefruit!!!
