Get 16 plastic ziplock baggies - one for each friend and yourself, and break two eggs into each one. seal them and put them in the fridge. set out bowls full of things that people like to put in their omelettes, like grated cheese, bacon bits, chopped onions - that sort of thing. Make sure there is plenty of variety.
Come breakfast time each of your friends can make up their own omlette by dropping the ingredients they like into their bag of eggs. Have boiling water ready (a hard rolling boil) and drop each bag into the water for exactly three minutes. Depending on the size of the pot of water, you can do several at once.
I know this sounds weird, but it really is wonderful, and the eggs come out just as though you'd really made an omlette in a pan - they're even shaped right! It's quick, it's easy, it's fun, and the clean up is a snap!

Make a brioche/french toast casserole. Then have a platter of sausages, bacon and ham. Add in a bunch of sliced fruits and slices of cheese. Big pitchers of orange juice with club soda.
BRIOCHE CASSEROLE
Mix together 6 eggs with 1/2 cup milk, add 1 tsp cinnamon and 3 tsp grated orange rind or zest.
Slice brioche or cinnamon bread into 1/2" slices. Dip into the egg mixture, then lay (overlapping) in a buttered 13x9 cake pan. Sprinkle a few raisins between the slices of brioche.
When the pan is full, pour any remaining egg over the bread. Sprinkle with more cinnamon. Cover and leave in the fridge overnight. In the morning, uncover and put in a 350 degree oven for 20-25 mins (til the the eggs are set).
Serve with syrup, sour cream infused with a bit of orange zest, and a variety of preserves (especially raspberry).

OMELETS IN A BAG
Guests for breakfast? Here is an easy fun way to prepare a tasty treat for breakfast (or anytime.)
Have your guests use a permanent marker to write their name on a quart size self-locking freezer bag.
Crack two large or extra-large eggs into the bag (more than two will not work), shake, mixing them well.
Put out a variety of ingredients such as cheeses, ham, onion, green pepper, tomato, hash browns, salsa, etc...
Have the guests add the prepared ingredients of their choice to the bag and shake.
Make sure to get the air out of the bag and zip it up. Place the bags into rolling-boiling water for exactly 13 minutes. You can usually cook 6-8 omelets in a large pot. For more, make another pot of boiling water.
Open the bags, and the omelet will roll out easily.
Be prepared for everyone to be amazed.
This is very nice to serve with fresh fruit and a coffee cake. It's a great conversation piece and everyone gets involved in the process.
Note: Use only the name-brand bags, or they will fall apart during cooking. I have made these many times and been impressed every time.

Look up a recipe for a strata on the Internet. It's great because you make it the night before and just throw it in the oven the next morning. I've served it for breakfast for a crowd before. Then we might have croissants, a bowl of yogurt and some fresh fruit.
I like to serve mimosas with it, too! Of course, orange juice is just as tasty.

Make 2 13 by 9 pans of some nice coffee cake- that way it's more upscale than doughnuts, but your not slaving over the stove with the eggs/or pancakes. Everyone can have a piece or 2 of it, and serve it with some fresh fruit, and heat up frozen sausages. To drink? coffee or oj.

Teared tortillas. Easy to make, able to make LARGE quantities.
In a large frying pan heat vegetable oil,Tear up corn tortillas into bite sized pieces anywhere from 6 to 12 depending on how big the pan is, fry the tortillas until they are limp, then add ummm 4 to 6 eggs depending on the pan and how much you egg you want, and then scramble like usual salt and pepper, serve pace picante sauce with it if you like but this is the very best quickest, cheapest meal you can make. For 15 people you will probably need to make 3 or more batches but it will be easy to do. good luck!!

Omelets. They seem complicated, but aren't really. If you can get some of the quest to hang out at the kitchen table-hand each one of them a knife and a particular vegi to cut, mushrooms, bell peppers (different colors add flair) onions (red are sweeter) have someone maybe brown sausage (just as you would hamburger for soup), maybe bacon-I have even used hotdogs cut up into small pieces and fried. Then you be in controll of the egg mixture which is very simple eggs and a little milk, you could have all sorts of spices available also.

Serves about 12.
Eggs Benedict Recipe
This recipe was given to us by my mother-in-law. We love it! And everyone we serve it too raves about it.
12 slices ham
12 slices swiss cheese
12 eggs
1 cup heavy whipping cream
1/3 cup grated parmesan cheese
12 servings
1. Fold ham slices in half; set side by side in a 9x13 pan.
2. Fold swiss slices in half, layering on top of the ham to form a"nest".
3. Break eggs over the swiss.
4. I usually break the yoke after it's in the pan so there's not a large clump of yoke.
5. Pour cream over the eggs.
6. Sprinkle with parmesan cheese.
7. Bake uncovered for 20-25 minutes at 375 or until eggs reach desired doneness.
8. Let stand for 5 minutes.
9. Is usually served with English muffins but we're watching our carbs

If i was having 15 persons for breakfast i would set out coffee,tea,orange,apple and grapefruit juice,milk 2%,several donuts,bagels and some bread for toast,scramble eggs,sausage,pancake or hash brown and cut up some assortment of fruits (eg) what ever is in season melon,cantaloupe,watermelon,oranges,pineapples.A few bananas and some apples in a dish you would be straight.Good luck.

I would make 2 or 3 13x9 pans of:
The night before put a layer of white bread in the bottom of the pan, mix eggs and milk and pour in pans with bread, cover and let sit in refrigerator over night. In the morning add diced ham and whatever veggies you like, I always added onions, red peppers and broccolli. Spread oer top of bread/eggs , cover and bake , about 20 minutes, check doness cover with cheddar cheese and finish baking for 5 minutes.Serve with fresh fruit and pastry.
