Ok, it's going to be really hot today and I'm going to a friend's cookout. I was asked to bring a dish to pass, but I really hate the tired old things.

I'm hoping someone can help me come up with a great idea!

Although there were some really interesting ideas, some fun, some a bit impossing on my host, but the watermellon cake just sounded fun!!!

I went to a party on the 4th where a woman made a watermelon cake- literally out of a watermelon. It was rectangularly shaped (not sure how she did it) and topped with whipped cream, strawberries, and blueberries (flag pattern). People cut off chunks and ate them like cake. It was awesome, and I think some of the other people who brought desserts were jealous that they hadn't thought of it themselves. You could always alter the pattern and/or fruits and have the same effect. Have fun at the cookout, and thanks for the advice on the olives. :)

Pink Lemonade Lime Dip
It sounds funny, but it is so good, You serve it with fresh fruit or sugar cookies, or anything else you think it might go well with.
1 (14 ounce) can sweetened condensed milk
1 (6 ounce) can frozen pink lemonade concentrate, thawed
1 teaspoon grated lime rind


1. Stir together all ingredients in a small bowl until blended. Cover and chill at leat 2 hours.

OR

Layered Hummus Dip
The Mediterranean version of the ever popular Mexican layered dip. Instead of using garlic salt, I mix a large clove of pressed garlic with the hummus. Serve with toasted pita, flat bread or tortilla chips.
8 ounces prepared hummus
1/8 teaspoon cumin
1/2 cup chopped tomatoes
garlic salt
1/4 cup chopped cucumbers
fresh ground pepper
4 ounces crumbled feta cheese
2 tablespoons chopped kalamata olives
2 tablespoons chopped parsley
2 cups

1. Combine hummus and cumin, spread on the bottom of a 9 inch pie dish.
2. Top with a layer of tomatoes, seasoned with garlic salt.
3. Add the cucumbers and sprinkle with pepper.
4. Add a layer of feta topped with olives, then parsley.

Don't want anything with MAYO in it on a hot day...here are a few suggestions..

Make a peach and blueberry pie/pop up that can be done on the grill

To make life easy... Get store-bought pie doug, roll it out... to that add a mixture of peaches, sugar and blueberries... fill the dough slightly off center and then egg-was the edges, fold over like it was a calzone and fork-seal the edges... on the grill spray it liberally with veg oil for grilling and lay it on a sheet of aluminum foil - off direct heat and in twenty mins you have a hat and bubbly - -"someting different" off the grill dessert!!

This is called "Bacon, Lettuce, and Tomatoe dip". Doesn't take long, and everyone loves it!!!
prep- 15 min.

2 cups sour cream
2 cups mayonnaise
2 lbs sliced bacon, cooked and crumbled
6 plum tomatoes, chopped
3 green onions, chopped
assorted crackers or chips


In a bowl, combine the sour cream, mayonnaise, bacon, tomatoes and onions.
Refrigerate until serving.
Serve with crackers or chips.

bring something for the grill, or something cooling for the palate

cantaloupe slices wrapped with proscuitto
corn on the cob
asparagus to grill
cucumber salad, a cooling dish
honey dew and cucumber salad (Whole Foods sells one that tastes great if you don't want to make it yourself)
gazpacho w/croutons
green salad
tomato, basil, mozzarella salad drizzled with olive oil and a splash of balsamic vinegar
