A good basic white sauce can go with a lot of things. Melt 2 TBS. Butter or Marg. in a sauce pan, over low heat. Stir in 2 TBS. all-purpose flour, add 1/4 tsp. salt, and 1/8 tsp. pepper. Cook over medium heat, stirring constantly, until mixture is smooth and bubbly; remove from heat. Gradually stir in 1 cup of milk. Heat to boiling, stirring constantly. Boil and stir for 1 minute. Serve with vegetables or use in casseroles like tuna noodle casseroles. Or layer with potatoes, and onions or maybe even ham. Bake in the oven, and makes Good scalloped potatoes. Put some dried chipped beef and serve over toast. Or put in some fried sausage, make it gravy -like and put it over toast. There are many possibilities with this white sauce. you can make it thicker or thinner by adjusting the butter, milk and flour or double or triple the recipe for larger dishes etc.... enjoy. Mushroom Gravy
2 1/3 cups vegetable stock
5 ounces mushrooms, sliced
3 1/2 tablespoons all-purpose flour
Combine 1/3 cup stock and mushrooms in a heavy nonstick skillet over medium heat. Saute mushrooms 7-8 minutes or until they begin to turn brown and liquid has almost evaporated.
Remove from heat and set aside. Combine 1/4 cup stock and flour in a jar with a tight fitting lid.
Shake vigorously.
Combine with remaining stock in a heavy saucepan over high heat. Bring to a boil.
Reduce heat to medium and simmer 15 minutes, whisking frequently, until mixture begins to thicken.
Add sauteed mushrooms and simmer until just heated throughout. Season with salt and pepper to taste.
Vegetarian sausage links can be bought at many supermarkets, experiment with the different brands and choose your favorite for this delicious gravy. If you would like a thicker gravy dissolve 1 tablespoon of cornstarch in 1 tablespoon warm water and mix into the gravy just before bringing it to a boil.
6 links vegetarian sausages
3 tablespoons olive oil
1 cup vegetable broth
1/8 cup all-purpose flour
1 teaspoon salt
fresh ground black pepper
1/4 teaspoon dried sage
Place the vegetarian link or patties and 1 tablespoon oil in a large frying pan, fry the links until done.
Break the links into small pieces.
Add the remaining oil and flour to a small pot.
Mix the flour with the oil over medium low heat until a rue is formed.
Slowly add the vegetable broth, mixing well.
Add the salt, pepper, sage and cooked sausage pieces.
Bring mixture to a boil.
