Fake meats make an easy transition, especially if you use the lunch meat slices and pack a bag lunch for work (fake lunch meat slices are in the produce section of the grocery store, near the tofu. Nuts, seeds, grains, beans all out there. If you try tofu, try it already flavored or you will hate it. Nasoya brand is very soft like jello. Not a good first experience. I don't know where you live, but if you can find a health food, go there and ask lots of questions. In some communities there are vegetarian clubs that do potlucks. Don't feel you have to declare yourself a vegetarian to enjoy their company, you get points for trying meatless meals.

Go to www.bn.com, and check out some of the vegetarian cookbooks they have there.

I recently purchased

"Student's Vegetarian Cookbook"
by Carole Raymond

and the recipes are relatively simple and delicious!

I also have

"The Teen's Vegetarian Cookbook"
by Judy Krizmanic

and the recipes are very simple and fast!

I'm a new vegetarian (going strong for about a month now), and I'm loving every minute of my new meat-less lifestyle! I wish you the best of luck!!! And even if you slip a time or two (I did :-D), as long as you remember why you've made your decision, you'll be fine!!!

Try some eggplant and rice, grill that eggplant up with some extra virgin olive oil, salt and pepper. Pure bliss. and vegan!!! Also eat it witha side of beans (black beans and rice are delicious and easy) and a vegetable with iron. The only problem with some vegetarians is them not eating the nutrients they would get from meat. Just make sure you eat nuts, beans and soy products for protein. Green veggies for iron and soy milk for calcium. I also take vitamins to make up too.

For lunch, i usually eat a pb and j sandwich on whole wheat with tortilla chips or some immattion soy meat sandwich.

Breakfast is some Go Lean! Crunch from Kashi with plain soy milk. It's so healthy and whole grain!

And for dessert they have this delicous soy vegan ice cream called Tofutti. It's better than ice cream taste wise. Just go explore the organic section of your grocery store!

There are a lot of excellent meat substitutes. Morningstar Farms is a good brand for the "transition" period if you like the flavor of meat. They make Chick patties & nuggets. Morningstar & other companies make burgers that taste like hamburger and not.

A lot of meals taste much the same if you leave out meat -- like lasagna, pizza... (There's also a great pepperoni substitute by ... I think it's "Follow your Heart ... Usually in the produce/cooler section.)

Well, you wouldn't be eating meat. You could eat anything else unles you were vegan. Then you couldn't eat anything that came from animals. You could eat nuts, fruits, pasta.popcorn, There are endless ways to cook potatoes and many ways to prepare pasta. You could have spinach lasagna, tomato spaghetti. There are many options. However, chicken is very good for you. Why the urge to give up protein?

Tofu, dried beans and peas for protein. Also, vegi burgers. They sound gross, but I think they're pretty good. Not quite like hamburgers, but they're good with catsup, which is all that matters.I'm not vegetarian again, yet, but I will soon.Have fun experimenting and if you need recipes, check out PETA.You can get some good ones, there, for free.
