Traditionally, there weren't very many (if at all any) dairy cows in China. Their "beef" is a type of buffalo, like water buffalo. Usually these animals were used for farming, however, and not specifically raised to eat.....which is why most authentic Chinese meat dishes contain pork or chicken. The beef meat from buffalo has more of a grassy taste and much more tough. Beef dishes that you know (like mongolian beef, stir fry beef, etc...) could be substituted for buffalo meat since that is probably what they once ate (modern day China now has dairy cow beef so they don't use that much buffalo meat anymore except in remote areas).

As far as cuisines itself, the only place I've been to where they only eat a buffalo type and not beef is in Tibet. So anything "beef" was made from yak.

There are only water buffalo in China, which are related to the ox and used as a beast of burden. They aren't normally eaten. If you were to give a Chinese chef some buffalo meat, he would probably prepare you the same dishes he would from beef.

Buffalo are not indigenous to America. The Bison is the true name of the animal Americans refer to as "buffalo." Buffalo are all over Asia and are used as beasts of burden as well as food.

Yeah, I have a cousin in New Jersey, he's part Chinese and I think his Mom, my Aunt was once made by a buffalo. So I think the answer to your question is YES.
