typically its a mixture of sauce and spice... common ingredients are oyster sauce, soysauce, salt, sugar, maybe msg... can be all part of the "sauce" on chicken and broccoli...but different restaurants have their own recipe... with greater % of one ingredient or smaller % of another ingredient

More often than not it is oyster sauce, a thick, concentrated dark brown sauce made from oysters, brine and soy sauce.

You can normally find it in the Asian Food aisle of your supermarket if they have one, if not most asian food stores would sell it. Be careful though, a little goes a long way.

Basically, it's soy sauce (for the color of the sauce), brown sugar (adds kick in the taste), and corn starch (to thicken the sauce). Oyster sauce is a god alternative too....

2 tsp. cornstarch
1/2 tsp. sugar
3 tsp. water
1/2 tsp. ginger
2 tbsp. soy sauce
CHINESE BEEF WITH BROCCOLI

2 tsp. cornstarch
1/2 tsp. sugar
3 tsp. water
1/2 tsp. ginger
2 tbsp. soy sauce

Cut 1 lb. flank steak in 1/4 inch diagonal pieces. Marinate 2 hours in this mixture.

Prepare: 1 c. bamboo shoots, rinse 1/2 c. sliced mushrooms

Stir fry beef until it loses red color in 2 tablespoons of oil (about 1 minute). Remove from pan.

Stir fry broccoli, bamboo shoots and mushrooms in 3 tablespoons oil for 2 minutes. Add 1 1/2 teaspoons salt, 3/4 teaspoon sugar, 2 tablespoons water and cook 1 minute. Add meat and cook 1 minute. Add 1 teaspoon cornstarch blended with 1 tablespoon water. Cook until thickened. Serve over bed of rice. Serves 6.

it depends on the name of the food, could be any sauce.., teriyaki, char siu, sweet and sour, or even only garlic and soy sauce,,,stir fried chicken and broccoli

most chinese recipes use peanut or sesame oil, and maybe teriyaki sauce as well.

it's water and cornstarch that has gained the flavor and color of the chicken when cooked with it
