I buy chicken breasts, get a glass casserole dish, put a little water in to cover bottom. Then add a couple tablespoons of margarine or butter to dish. Turn oven on to 375, then sprinkle creole seasoning, garlic powder and pepper over chicken lay chicken in dish. Then cover with foil and cook about 45 minutes or until done. If needed you can add more water if it all evaporates before done. Also if you want you can put some barbeque sauce on chicken during the last 5 min. of cooking and maybe a little shredded cheese on top of the sauce let melt, its delicious. Or you can just eat plain.

I like to coat boneless skinless breasts with one of McCormick's Salt Free seasonings. You may need to pound the chicken if it's really thick at one end. Sear the chicken on high heat in a stainless steel pan for about 2 minutes a side. You want to carmelize the outside, but not burn it. Put the pan in a preheated 350 degree oven, cook 15-20 mins. This piece of chicken is very versatile.

You can cut it up and put it in pasta with chopped fresh tomatoes, olives, and some olive oil.

You can dress your pasta with a regular pesto or sun dried tomato pesto instead of fresh tomatoes. Pesto is easy, put sun dried tomatoes, fresh parsley and basil and olive oil in a small food processor. Process it into a paste and put on the hot pasta and chicken. You can leave out the sun dried tomatoes and add pine nuts and parmesan instead if you want.

You can slice the chicken and serve it on a roll as a sandwich or you can eat it as is. I serve it with cous cous that I prepare with olive oil and the same spice that's on the chicken.

Over an open flame.Or baked like you would a turkey. Smoking it in a smoker is great but takes a long time.Grilling works if you stand over it to put out the "hot spots" and make sure it don't burn "unless you have a rotisserie" I like to steam/saute chicken in a heavy pan with a little oil, with the lid on , on low heat.

Marinate in Italian salad dressing for about 8 hours. (I put them in marinade before I leave for work in the morning.) Then remove from marinade, place in baking pan sprinkle with a little salt and pepper, bake at 400 for about 20 minutes or until done. They are very juicy and tender, and go great with salad, or almost any side dish.
