Breakfast Burritos

Ingredients

1 tsp. vegetable oil
1 red potato, peeled and shredded
3/4 cup leftover cooked chicken, beef, pork or shrimp
3 eggs
2 10 inch flour tortillas, warm
1/2 cup salsa
1/4 cup fat-free Monterey Jack cheese, shredded

Instructions

Heat oil in a heavy nonstick skillet over medium high heat. Sauté potato 6-8 minutes, stirring frequently, until potato just begins to brown. Add meat and sauté 3-4 minutes until hot. Beat eggs and salt and pepper to taste in a bowl. Stir eggs into potato mixture and cook 1-2 minutes, stirring until set to desired consistency. Spoon egg filling into middle of each tortilla. Fold in sides to overlap filling slightly. Bring up bottom and roll into a cylinder that is closed at each end. Top with salsa and cheese.

Ingredients

1 Tbsp. vegetable oil
1 lb. boneless, skinless chicken breasts, cut into strips
2 cups tomato sauce
1 lb. corn kernels, thawed if frozen
1/4 lb. hot green chilies, chopped
1-1/2 tsps. chili powder
1 tsp. onion powder
1/4 lb. tortilla chips
1 cup shredded cheddar cheese

Instructions

Heat oil in a heavy nonstick skillet over medium-high heat. Sauté chicken 5 minutes, stirring frequently. Add next 5 ingredients and bring to a boil. Reduce heat to medium low and cook 10 minutes, stirring occasionally. To serve, spoon over tortilla chips and top with cheese.

Tex-Mex Casserole

Ingredients

1-1/4 cups cheddar cheese flavored crackers, crushed
3/4 lb. creamed corn, thawed if frozen
1-1/2 cups Italian style peeled tomatoes, drained
1/4 lb. canned chopped green chili peppers
1 onion\cooked, chopped
1 green bell pepper\cooked, seeded and chopped
2 cloves garlic, minced
3 eggs
1 Tbsp. chili powder
3/4 lb. ground beef

Instructions

Preheat oven to temperature 350°F. Combine 3/4 cup crushed crackers and next 8 ingredients in a bowl. Season with salt to taste and mix thoroughly. Add meat and knead with hands until well mixed. Transfer to a buttered deep baking dish and sprinkle with remaining crackers. Bake 1 hour, or until center springs back when pressed with a finger.

Hot Mexican Chocolate

2/3 cup cocoa
2 Tbsps. all purpose flour
2/3 cup sugar
1/8 tsp. salt
1/2 tsp. ground cinnamon
1/2 tsp. ground cloves
2 cups water
2 cups heavy cream
4 cups milk
1 Tbsp. vanilla extract

Instructions

Combine first 7 ingredients in a heavy saucepan over medium heat. Whisk until mixed thoroughly. Bring to a simmer. Slowly whisk in cream. Add milk, whisking constantly. Add vanilla and stir constantly until hot. Do not boil. Cook just under a simmer 5 minutes, stirring frequently.

Chili Relleno Casserole

Ingredients

3/4 lb. canned green chilies, seeded and rinsed
1 cup skim milk
1/3 cup all purpose flour
2 eggs, lightly beaten
3/4 lb. shredded cheddar cheese
3/4 lb. recipe-ready crushed tomatoes
1/4 cup salsa
4 large flour tortillas, warm

Instructions

Preheat oven to temperature 375°F. Dry chilies with paper towels. Whisk together milk, flour and eggs in a mixing bowl. Season with salt to taste. Place half the chilies in the bottom of a baking dish. Sprinkle with half the cheese. Pour half the batter over the cheese. Repeat with remaining chilies, cheese and batter. Place in oven and bake 30 minutes. Combine tomatoes and salsa in a bowl. Pour over casserole. Bake another 30 minutes or until mixture is set. Serve with tortillas.

Mexican food, if done right, is never simple. If you use mixes and shortcuts you can come up with some easy "mexican" food, but it won't be authentic. I am sure someone here can help with such recipies..if you ever have time to make real Mexican food (that takes long prep time) e-mail me and I will help. Have a great day...and good luck. (I have tasted some good quick "mexican" stuff, so not putting down the "simple" part).

do some carne asada with frijoles (beans and steak) start the grill put on some arrachera meat season and then do some pinto beans boil or in can put in a little grease on a pan and wait till hot then add the pinto beans and with a fork smash them there you have your re fried bean and meat you can add a salad and call it a day but like one writer say authentic Mexican food takes time that why is so damn good.

I know gripps!!! I always make tacos- hamburger or canned meat./ brown hamburger and drain fat- add garlic,onoin powder to taste"one teaspn per pound of meat" a pinch of cumin, two pinches ground mexican oregano"i always use this raitio" and chlli power to taste- I like it hot so I use cayenne pepper also- you could use papprica if you want it very mild. stir well and let simmer for at least ten min.-add a little water/ chicken stock/beer if mix is dry- the longer you let simmer the beter. Canned meat works good for quick-open can ,add spices microwave,done. You can use any type of meat -leftover turkey is great!!!. I make the shells by frying in oil- my daughter likes them soft-that's easy- place tortilla in hot oil"not smokin" untill it starts to soften than flip,let cook a sec. or two, then fold in half flip one more time than drain and put on papper plate/towel. Be careful with hot oil!!!It will take practice but it's not that hard-but hard shells are-oil temp is important- and freshness of tortillas.top w/cheese, tomatoes, lettuce/cabbage,sour cream, salsa whatever you like. Frozen burritos work for quick meal-(if you can find tasty ones" Place burritos in cake pan,pour one can of enchillada sauce over to cover, top w/chopped onion,olives,peppers,and cheese.bake at 350 for 15-20 min. or until bubbly and cheese is melted/golden brown. Spanish rice is easy w/lipton, knorr or ricearoni style packs, beans are easy from cans-but lack flavor of "all day" cooked. open a can of baked beans, pour on a baking dish, top with nacho crisp and grated tasty cheese, put it in oven until cheese melted and eat with sour cream, is that help?
