I've been vegetarian all my life. I eat milk, eggs and cheese so I'm not vegan. Other than that, I eat a wide variety of fruits, grains, and vegetables. In fact, I was raised to eat a lot of soy-protein products like are found from MorningStar Farms section of the grocery store (fake meats). I don't even worry about a lack of nutrition and I take no supplements. Every time I go to the doctor, I get a clean bill of health.

Types of Vegetarians
There is only one type of vegetarian! That is one who does not eat products from dead animals! You cannot eat just chicken and fish, and still be a vegetarian. Some vegetarians will consume animal products, if the animal was not killed to produce it. Lacto-vegetarians will use dairy products (milk, butter, cheese). Ovo-Vegetarians will eat eggs, Lacto-Ovo-Vegetarians will eat both.
But there is no such thing as a pesco-vegetarian (fish) or a pollo-vegetarian (chicken)! You either eat flesh or you don't. If you eat fish, you may call yourself a pescatarian.
Fruitarian Same as vegetarian, but only eats foods that don't kill the plant (apples can be picked without killing the entire plant, carrots cannot). A fruitarian does not, as commonly believed, eat only fruit.
There are also those who call themselves Vegan. This is a much more strict lifestyle. Vegans do not eat or use any product from animals or insects. Therfore they do not wear leather, silk, wool, fur or down products, or eat honey, marshmallows, jello, or dairy products, or use lanolin ar other products which are derived from living creatures in any way. The also do not buy products from companies that test on animals or any products with animal-derived ingredients. Vegans make a differenceIn one lifetime, the average American eats 11 cows, 1 calf, 2 sheep, 31 pigs, 92 turkeys, 2,287 chickens, and over 1,000 fish. Altogether a vegan saves about 3,424 animals.
Vegetarianism is not for everyone. However, if you enjoy fruits and vegetables, are non-committal about meat, and are good at planning meals, you may want to go vegan. But if you do not fall into that category, another diet plan may be preferable. Which diet program you ultimately choose may depend greatly upon your personal preferences and what kind of diet regimen you are prepared to follow over the long run. The key to any successful diet is commitment; you must be determined to succeed

I'm not a strict vegetarian, but I eat that way alot and have family members that are vegan. I started with Sunset Magazines International Vegetarian Cookbook. The most important thing to remember is variety. Eat whatever you normally would except the meat. So have that vitamin fortified cereal for breakfast. If you aren't drinking milk, eat it dry. I have dry cereal and coffee most mornings. Don't just have a salad. Have a salad with broccoli and sunflower seeds and croutons...you know what I mean. Don't just have a baked potato. Do like they do at Wendy's and make it a meal. Add whatever non-meat topping you like. Don't just have a green salad and side vegetables for deal. BORING. Make yourself a Mexican feast with a bean tostada (you can also get that at taco bell) and rice etc. Make a stir fry with all the same vegies you normally would, but add a handful of edamame. You can buy it frozen by the bag. This will give you not only a delicious flavor, but also a complete vegetable protein. Get your blood tested for anemia and if you find you are take a supplement or add fortified foods to your diet. It is easy to be a healthy vegetarian these days.

The same thing anyone else does that is concerned about eating right.
Think about it, how many people do you know that get the RDA of fruits, veggies and whole grains? Getting enough of these things would be taking precautions right? I dont know many people at all that take these precautions and many meat eaters certainly don't take them either with the consumption of saturated fats, antibiotic loaded flesh and the over abundance of protein.
Did you know that the average American gets way too much protein and that can lead to many health issues?
Did you know that almost everything has protein and it's nearly impossible not to get enough of it?
For example: 2 slices of REAL whole 9 grain bread has 11 grams of protein.

Being a vegetarian is a full-time job. You need to find foods that will provide needed nutrition, especially protein. Vitamin supplements help.
When I was a veggie, meal planning was a complex affair.

I just eat a variety of healthy fresh food.
I've been doing this for so long I don't consciously pick specific things to eat. I really don't think about it much - maybe I'm listening to my body when I think mmmm, I fancy a kidney bean and rice salad or whatever.

suppliments, getting a variety of foods, it all depends on how strict you want to be. There are plenty of books out there about what kind of suppliments that would be needed. The only thing that is hard to suppliment is the enzymes your body produces to break down meats and cheeses, going back to eating meat can be very hard.

You have to watch out for low protein and calcium, especially if you're a vegan. Bean and rice combinations can get you complete proteins, leafy greens can get you calcium, and tofu can get you both.
If you're not a vegan, and are eating milk and eggs, those help too.
